Ingredients
1 small red cabbage, thinly sliced
2 medium apples (such as Granny Smith or Fuji), cored and sliced
2 tbsp olive oil
1 tbsp cider vinegar
1 tbsp brown sugar (optional)
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp salt
1/4 tsp black pepper
a handful of mixed nuts added (optional)
Preheat your oven to 200°C (400°F)
Roast for 20-25 minutes, stirring halfway through, until the cabbage is tender and slightly caramelised and the apples are soft.
