Today, we're making Alfredo! But this time, we're making it cajun style with some added spice for some oomph! This is a variation of the Alfredo I grew up with, and although it's not traditional, it's always been my favorite. Adding the cajun spice really takes it over the top too! How I did it below!
Ingredients:
4 tbsp butter
1 pint heavy cream
1-2 cups freshly grated parm (however much you prefer)
1 tbsp cajun seasoning
1/8 tsp cayenne
1/4 tsp freshly grated nutmeg
salt to taste
1 lb fettuccine (or pasta of choice)
In a large saucepan over medium low heat, melt butter, then add heavy cream. Once the cream comes to a simmer, add the cheese and whisk to combine. Then add your cajun seasoning, cayenne, nutmeg and salt. Taste for adjustments, then add slightly under al dente pasta and toss. Make sure to reserve 1-2 cups of starchy (heavily salted) pasta water to add to the sauce if need be and for heating up leftovers! My mom always makes double sauce, so if you want it extra saucy you can do that too!
