@@Dadwithapan Spot on, 50% lemon juice (has to be fresh) and 50% soy sauce (has to be Kikkoman). No vinegar yuck thats ghetto my mom and grandma and 5 siblings would cringe. Measure out your lemon juice first, the add an equal amount of soy. That way you'll never have to add vinegar. We eat it fresh, marinade for an hour or so or long enough for the onions and hot peppers to release their liquid. I don't like finadene older than maybe 48 hours, the green onions go limp, the lemon loses its fresh brightness and it creeps me out. But that's just me. Try adding finely chopped red onion or shallot, mix some jalpenos (not hot these days) and thai bird chilis. Enough onion/chili to take up 3/4 of the liquid. Like chunky salsa, I call it chunky finadene. Nobody I know does it this way but the onions/chilis once pickled are the star, right? Trust me, you'll never go back to the traditional 90% liquid.

Thanks for this video,, this is exactly how I was introduced to finadene with grilled chicken!! So my daughter married a Chomorro 20+ yrs ago and his parents came California visit and introduced me to Guamanian food,OMG! I fell in love with finadene and I can eat it with anything. I also loved the pickled green mango which was grown in their backyard and the super duper hot spicy hot sauce from peppers that were grown from seeds that were digested from birds. I love spicy, I'm Latina, but his dad warned me to take it easy with that sauce and to put it on my burrito tortilla with the tines of a fork, not by the spoonful, he was right, lol! Rest in peace Mr Paul Aguon, I'm so glad I met you and your lovely wife, that I was introduced to your lovely proud culture and that we share 3 beautiful Chamorro grandkids. ❤ I'm a subscriber now! 😊

Served in Guam 🇬🇺 all the Chamorro I knew on the island used Calamansi instead of lemons. Makes a HUGE difference. Probably hard af to get in the states though. If you can find some, use them. Hafa Adai bro

Are there peppers that can be substituted for each one? My super markets here in Las Vegas don’t have Thai and fresno peppers.
@Dadwithapan
@Dadwithapan 2 жыл бұрын
Fresno are basically just overripened jalapeños, so you could sub those jalapeño. Thai might be trickier, if you can find cayenne, that’ll be your best bet, if not I’d try Serrano

Not sure why you marinate the finadene, but that’s ok it’s to your taste, although it takes the freshness out of the ingredients. Guamanians gotta have this daily on every meal and it’s gotta be super spicy… enjoy
