Fantastic! I can’t wait to give this a try. My wife is Korean American and we both love her moms soups this time of year. Going to give this a try to surprise her. She isn’t a fan of mushrooms.. is there anything you would recommend as a replacement that still brings in some of that umami?

I hope they will like it and you win some brownie points! Instead of mushrooms, you can also add anchovy powder and/or nori slices. That should add some umami for sure.
