1. What would be the point of "veganising" some random recipe, when there already exist plenty of "vegan recipes" Nikki could make instead, with reliable results. 2. Nikki isn't a chef, in fact she struggles to make her carrot strips look pimp, so "veganising a recipe" might be a little bit out of her league. Hell, I can cut sick carrot strips and I'd regard "veganising a recipe" as being out of my league, granted I have no beard and have not created a Tumblr account so I voice my outrage over something on a regular basis.

When you have to cut carrots thin like that, using a vegetable/potato peeler helps a bunch. For some dishes you need to slice them again as they'll end up too wide, but it's a lot easier imo, since they're flat by that point.

+Panda Canada rinsing rids noodles of starch!!! (I found that out once when I made rice stick noodles, the package instructions said to rinse after prepared I didn't think that was necessary BOY OH BOY was I wrong about that several days later when I discovered my rice stick noodles were a starch infested MESS!!!)

Soba Noodles are typically bundled in 100 gram (3.4 ounce) lots, that's why it's wrapped in paper. It makes it easy for people to get their recipes correct. Soba noodles are one of those Japanese comfort foods which can be eaten at train stations, inexpensive standing (no seats, you eat at the counter and typically from ordering to finishing is less than 10 minutes) restaurants ($3 to $7 per bowl), simple restaurants, traditional restaurants and upscale soba restaurants. The noodles can vary in thickness and I prefer the standard thickness compared to the thinner ones. Get a hot bowl of soba topped with some seaweed and other items, compliment it with either a rice ball or a couple of inari sushi (rice wrapped tofu), a cup of tea or water and you should be one happy person. Years ago, there was a standing soba restaurant near the US Embassy in Tokyo that I frequented so often for lunch that the staff would see me coming and plate up my order. I miss that place. :( Cold soba, called Zaru Soba (ざるそば), is typically a summertime dish and served with a dipping sauce. I'm not a fan of it but it's pretty popular with the locals. So, the next time any of you are in Japan, hit up a Soba restaurant, standing or otherwise and get a bowl for yourself.

I love the pre-measured serving bundles. Sometimes I can't find them like that. FYI : 100% buckwheat(soba) noodles, are Gluten Free, but it's hard to find. Almost all Buckwheat noodles have Wheat in the ingredients. I've only found Eden Foods sells/makes GF/100% Buckwheat soba noodles. Otherwise: Pre-boil water before adding noodles (add a bit of salt if like); Move noodles occasionally while cooking; Once the noodles are cooked (if you are not going to use them immediately then) rinse noodles with drinkable water (no chlorine) and hold them in enough water (that they are not compacted tightly) after rinsing off the excess outer flour. This will cool them however. So you may need to warm them up a bit when you're ready to add them to the rest of the recipe ingredients. If you want cold noodles, you could add some ice cubes to the holding water. Slap it high if you actually read all of this. XD

I love your tastytuesday videos, always look forward to them. Here's a tip for the noodle issue: put a bit of oil into the boiling water so that when you drain them, the noodles aren't as sticky and should be separated.

@ Nikki Tamari is a specific variety of soy sauce make without wheat. FYI, calling it "tamari" is really just shortened from "tamari soy sauce" and can mean other things in Japanese if you just say "tamari" just like how if you say "agave" instead of "agave syrup" you are technically referring to agave plants but everyone knows you are just shortening "agave syrup" and not actually using agave.

A trick for making really thinly sliced carrots and it's super easy: use a potato peeler. You'll get really paper thin strips and you can keep them long or cut them in half and you're done :)

Microplane zester, get one! Get the one with the smallest holes, I think it's the most useful. You'll be zesting/grating everything you can, lol. Most large supermarkets even carry them.

I feel for ya when I saw those noodles x.X Besides remembering to remove the paper and giving the noodles a stir once they go into the pot, you'd also want to rinse the noodles well once they're done to remove the excess starch. This creates a better mouthfeel and makes them taste better. Thats how they do it in Japan btw.

Next time drain the noodles and immediately run cold water through them to prevent clumping. You could also toss through a teaspoon or so of sesame oil to help. As for your carrots...ditch the knife! Hold your carrot on the cutting board, take a vegetable peeler and press in firmly and pull it from top to bottom - wafer thin, long, wide carrot pieces that soak in more flavours from the sauce.

For ginger, you can put a layer of plastic wrap over the side of the grater you're using, and grate on top of it. That way, you can just lift it up and not waste any of the ginger. Courtesy of Good Eats.

#wcw Nikki "Tasty Tuesday" Limo, lol. Good one, I use the wide slots on the grater to do carrots, does little round slices. Grating normally is also a way to do fine carrots and celery, cucumber, etc. I never rinse noodles or pasta, but *do* toss them in the sauce or light olive olive oil immediately. A little oil in the water with the salt helps as well. I bet cashews would be great in those.

When making something like that , you can actually use your vegetable peeler to thinly slice your carrots ! After you peel the outer peel off , use the peeler get make thin ribbons of carrots :)

Don't put oil in the water bc it prevents it from sucking up the sauce. It'll basically just coat the noodles instead. Soba noodles are supposed to be rinsed in water and they won't stick!

Not sure if I'm a fan of soba noodles, because I've had other buckwheat food products and didn't like the flavor. However, I think I'll try this with thick rice noodles. its quicker to bring youw water to a boil then salt it. the salt will raise the boiling temp. and make it take longer. google it if you want :)

Nikki, When pasta comes together like that it's SO annoying I know. My experience to keeping pasta from doing that is add a tablespoon of olive oil to the water. & I'm not sure but maybe a garlic press would have worked on that ginger. I SO enjoy your vids your hilarious!

I should've mentioned that once you put the noodles in, you do need to stir it so it won't stick together. When it soften, drain it and you are done.
