Made this tonight with my daughter and we had it for dinner. Fantastic. I never would have thought that peanut butter, soy sauce, chili oil, garlic and maple syrup would work, but man it sure did. The crunchy roasted crushed peanuts. The sparkle provided by the ohopped green onions. Complex flavor. Deeply savory with sweet undertones and just an aftertaste of heat. 10/10 will make again.

My ex mother in law taught me a similar recipe. She used tahini in place of peanut butter and lots of cilantro instead of green onions. I haven’t made it in a long time so I’m completely inspired to create again using your method. Thanks for the recipe.

I am from the Caribbean and I really want to thank you for your videos. I am a person with strong Indian and Chinese ancestry however my Chinese ancestors were predominantly men and because of the era and area they came from and the type of work they did in the Caribbean they did not get to pass down much cooking information from their cultures and those of their ancestors. I've always loved all asian foods but only curries and strongly indian based cuisine was thought in my family. Since finding your channel I've been able to successfully learn how to make other types of asian foods that I've always craved but been unable to cook (would often have to buy Chinese/ Thai / Japanese type dishes). I am a lover of soups and ramen but didn't understand anything about it and since going more plant based and finding your videos I can say I've actually made some of your soup/ stock recipes and felt a different feeling of home and reconnection to my ancestors and I can finally eat the type of food I have been dreaming of since childhood thanks to your cooking. I'm a peanut butter addict, so, of course, I'll be trying out this noodle dish. Also, I am a chili oil addict, thanks to Wil Yeung. His first chili oil video is my favourite - Chinese Smokey Red Flavoured Chili Oil. Check it out. It's not strained, as is his later Red Chili Oil recipe. Both are intense flavour! Not hot, just intense flavour. I've done them both... However, the first recipe (Chinese Smokey Red Flavoured Chili Oil, my favourite) has the added texture, because the oil hasn't been entirely strained of everything. Whenever a recipe calls for a tablespoon or two of oil, I head for my jar of Chinese Smokey Red Flavoured Chili Oil. It just takes whatever I'm cooking to a delicious new level. Coupled with peanut butter, green onions, and noodles, Wil's noodle recipe is heaven...

Until I can make a supply of Chef's hot oil, I am using up the several jars of Turkish shatta hot pepper sauce from Dollar Tree, mixed with peanut oil. Next, the real thing!

I've made this recipe twice now- I bought some chili oil from the supermarket rather than making my own as I didn't have access to all the spices required. Turns out the oil I bought is very mild unfortunately, so the first time I made the noodles, it was nowhere near spicy enough- though still really good. The second time, I added a bunch of chili powder to the sauce, which definitely helped bring the spice level up. Hopefully I'll be able to find somewhere that sells the spices I need for the home made chili oil soon, because that stuff looks amazing!

Love the whole presentation. So professional and also very calm. My wife and I are going through obtaining dentures. I can easily see how easy it'd be to adapt this recipe to no crunch, which is what we require. I'm sure there're millions like us; either temporarily or permanently. Because I so appreciated this recipe. I would ask/suggest for more recipes that could be adapted or specifically for people with our type of concern. Just wanted to say that I cooked this recipe, but with a few small changes, (substituting maple syrup with honey, adding diced chicken breast, increasing the peanut butter, but removing the peanuts from the added seseme/peanut.) It turned out delicious. The only thing I'd change is add a bit of salt. Thank you so much for sharing this dish. I loved it and will definitely make it again.

Absolutely love your calm and clear voice (never keen on music accompaniment but at least it's not too overbearing). I live in a very rural part of Portugal and "normal" ingredients seem to be impossible to get hold of so the fact you said spaghetti can be used in place of Udon noodles was music to my ears! Oh my god, I remember these noodles!!! I had something similar where I came from; it’s called “sweet water noodles,” a typical street food in Chengdu. I used to go to this tiny noodle joint after school with my friends. I haven’t had or even thought about these noodles for at least 20 years. I watched this video last week, and made the recipe last night with sweet potatoes. It was delicious!! My daughter and I rarely eat meat, so I made rice with lentils (for protein), with the sweet potato curry over top as our entire meal. It was filling, healthy, and so yummy!!

When we finish a pot of peanut butter, we often get very chunky, dry bits at the bottom that are almost impossible to spread. (happens with organic peanut butter if you don't stir every time) These are perfect to use in a peanut sauce! We go through 1-2 pots of peanut butter every week, and we save the dry bits to make a sauce similar to this. Always an amazing taste explosion.

@@sherrycooper3598 I pat dry and cut extra firm tofu into 1" cubes, roll in cornstarch, and pan fry in oil, turning over for and even crust. I use medium heat. I've used grapeseed, peanut, olive or coconut oil. The coating is light and crispy. In the past, I also sprinkled in nutritional yeast. Hits the spot. I occasionally crave it.

Preparing this recipe was fast and the results were delicious, I’m definitely adding this to my regular rotation of noodle dishes. I added about 4 cups of baby spinach to the boiling noodles for the last 30 seconds of cooking, then drained spinach along with the noodles and transferred both together into the sauce, buenisimo! I made this tonight! I used soba noodles instead of udon and 2 tablespoons of gochujang instead of chilli oil, because it’s what I had on hand, but it still worked. Tasted delicious! Everyone loved it. The dark soy sauce I used had lots of umami which I think deepened the flavour profile.

I just made this! Oh my goodness so so good. I was missing the whole peanuts, sesame seeds and dark soy sauce but I was able to get by with what I had. I added some broccoli and baby bokchoy. Delicious

These are the best and simplest peanut noodles I've ever had. I used black sesame seeds and cashews, and chopped them with a knife. Chili flakes since I didn't have premade chili oil. I want these tomorrow and the day after that and the day after that. I'm going to do broccoli and crispy tofu with these next time. Incredible.

I watched this last night. I made the chili oil this morning. I went shopping for the ingredients I needed and I made the noodles this afternoon. I was very good. We all liked it a lot.

Chef Young, you video's are very well crafted, I could listen to you talk all day, very soothing. But to get to the point of this comment, I made this recipe last week and upon my family's demands, they had me make it again, this recipe the most delicious meal I have ever made! I made it again yesterday, I quadrupled the amounts thinking it would be enough for a week, I woke up early in the morning to have some more, there was only a tablespoon left in the container. You don't really know how amazing you really are! Thank you so much for all that you do! Keep making more videos as me and my family are fans! God bless.

All of your recipes are so delicious, thank you! I have probably eaten this dish on average once per week since this was posted. It’s so so so good, so quick to make and I don’t need to buy anything in especially for it. I generally throw in some plain smoked tofu which I think goes really well. I’m just about to make this again tonight. Thank you for all your delicious recipes!

Correct, weekly meal. Have a very similar sauce. Daughter loves it so much she accepts/fights through the heat. So good. Thank you.
