From my knowledge, Sam is an aggressive kid with an absentee father, and neglectful, careless mother. Not only that, in the episode where they show a world where Carly was never Sam's friend, Sam ends up in prison (I don't now if she had any criminal charges in the context of the regular show, but it wouldn't surprise me). And along with being incredibly mean and abusive, Sam loves food, while McCurdy had an eating disorder. So even in fiction, McCurdy was forced to endure and act out an exaggeration of the life she actually leads outside of the show. That is horrific beyond belief. Sam's character was always like this, so I doubt they wrote her as some kind of sick joke on McCurdy, but they certainly ignored the suffering they put her through.

The Plain White Ts episode didn't age well. Not only do we have another foot fetish scene(an issue in many of Dan Schneider's shows that ruins their quality), but the "Sam likes food" joke being very reminiscent of Jeanette McCurdy's struggle through eating disorders aside from her neglectful mother, of which she begged the writers to remove that gag but denied her offering. Nickelodeon and Disney sitcoms are good and all, but they hold dark secrets later unveiled in the years to come. For Disney Channel, there's the toxic relationship between Zendaya and Bella Thorne(the latter was then homeless, only spending money on Stouffer's coupons and had to work on Shake It Up so it would bring her out of poverty and it worked; with Thorne becoming a successful actress in the process), some of their stars especially the talented Mitchell Musso getting in trouble with the law, and a former Nick sitcom executive/infamous pedophile Brian Peck working on The Suite Life of Zack and Cody, among others.

Do more live action kids shows; these are the shows I would recommend: Andi Mack, H2O Just Add Water, The Bureau of Magical Things (both shows created by the same guy), Best. Worst. Weekend. Ever (to me, the funniest recent kidcom since Good Luck Charlie, which I also recommend) Warped!, The Astronauts, The Barbarian and the Troll and finally, Secrets of Sulphur Springs! That show needs more attention! It's the best live action show on Disney Channel OR Nickelodeon right now! I can't recommend it enough!
