I usually do cannelini Siciliana made with savory crepes instead of the pasta, you know, the bechamel, italian spices and cheese. But your version is so inviting. It's a lot of spinach...stalks have to be removed so add 1/2 hour to de-stalk the spinach, and have a very patient friend to help you. Will try!

Is it a Greek culinary tradition to put mint in your red sauce? My family is from Sicily (of Greek origin) and my family sauce recipe has mint in it. I adore using mint in red sauce and have never heard of many other people doing that. Makes total sense if it is more of a Greek thing...
