I betcha that sausage will work instead of hot dog meat. German brands use sausage while American use weiners. Sausage and mustard is a combination made to be with each other. Weiners are really salty and the addition of ketchup to the American weiner is a must, to counter the saltiness of that sodium filled weiner.

There once was a Greek, tommy c, who owned the Indiana red hots. He'd use Vienna hot dogs. But topped them with a Greek twist... pickled green tomatoes or pickled stuffed (cabbage, carrot, parsley) banana peppers or pickle stuffed hot pepper. They were exceptional. One of a kind.

I don't get people's hatred of ketchup. You want to know what's more american than yellow mustard? KETCHUP!!! Especially from a food lover's point of view I just do not understand. as far as condiments go it balances mustard's tang and spiciness perfectly with it's sweet bite. Those who hate on ketchup are savages. Pure and simple. (among others YES I am talking to you New Haven Connecticut with your flavorless Louis' Lunch "original" burgers!!!) Now that that's been said, feel free to shower your hatred upon me.

Because you can do better than vinegar, sugar, water, and a slight touch of tomato puree. If you need that extra bit of sweetness to your dog, just use diced tomatoes. I think most people see ketchup as a child's condiment. Something most adults grow out of by at least age 25.

I will never give up ketchup!!! But I also love classic yellow mustard, so I understand. However after living in Denmark, adding remoulade or mayonnaise to hot dogs (along with ketchup and mustard) is most definitely my favorite way to enjoy them!

sorry..but thats a dumb question. "If i got a bigger roll..can i put more meat in it?" If you want you can make a bun the size of a house you might get a meat appartment in there..with a lettuce, tomato, and onion attic and a condement basement..

Sizzlik Not all rolls should be used for just about anything. Just because this works for hot dogs doesn't mean it'd work for a moister, denser filling like cheesesteak stuffs. You'd need something that can stand up to that sorta thing.

I made these today. First, I forgot to add the melted butter to the dough. The result being that the dough was a bit too dry so I added a little water (didn't realize I had forgotten the butter until it was already rising) Second, I let them rise too long (checked after 1:30 and the dough had tripled!) so they ended up being huge, like 10" long. All that being said, they are delicious. I will try again and be more attentive but these are soooooo good. We're making lobster rolls tonight.

I've had bread over-rise when I've let time get away from me. Now I set a timer alarm on my cell phone to remind me to check. And I check sooner rather than later. Sometimes that dough just takes off quickly.

I wonder what would happen if Chef John went to Denmark and ordered a hotdog. Here in Denmark a hotdog comes, as standard, with: - Ketchup - Mustard - Remoladen - Chopped raw onions - Chopped fried onions - Picked cucumber slices - grilled or boiled sausage To that you can often add even more stuff specific to your taste. I wonder who he would blame for that! ;-)

This is definitely closer to a hoagie/steak roll more than a hot dog roll. I prefer the hot dog rolls' texture but I prefer how this dough isn't horribly sticky to work with.

Metric recipe: Ingredients to make 8-10 hot dog buns: 1 package (2 1/2 tsp) dry active yeast (I used Fleischmann's “RapidRise” Yeast) 2,3 dl warm water (40 celsius) 1 large egg 3 tablespoons butter 43 gram 3 tablespoons sugar 37 gram 1 1/4 teaspoons salt 8 gram 450 gram all-purpose flour* *Note: add 73 gram of the flour to the yeast and water, and then the remainder before kneading Bake at 190 degrees C. for about 20 minutes, or until golden-brown

I came looking for this recipe. I just got a 12 pack of large hot-dogs and needed a good bun for them. Store-bought hot-dog buns are terrible. Too small and no texture. I have made Chef John's hamburger buns twice and that has to be my favorite KZbin recipe I've used and I've saved thousands. Thanks Chef .....

The Ketchup Conundrum: I'll admit I like a touch of ketchup but what I hate, and what makes ketchup the devil, is biting into a big glob of ketchup. Nasty. So what I did is get a squeeze bottle, fill it mostly with mustard and mix in a little ketchup. Colorwise it's more like a Valencia orange, less like the General Lee. A hint of ketchup taste but without the nastiness of full-on ketchup.

Ha, I only like mustard on my hotdogs too. Anything more than that (or other condiments in place of mustard) seems to take over and I never enjoy my hotdog as much as I do when I only use yellow mustard. Don't make the mistake I did by buying a big thing of Heinz mustard at Costco, that stuff is awful. French's all the way. Buns looked great, btw, lol.

After they are done baking, immediately brush the butter on them and throw a tea towel on them! It allows the butter to make steam and it permeates the crust so it can be soft ^_^

Split the hotdogs, pan-fry them crispy, toast (or make) the buns. Once you put the hotdog in the bun, top with Worcestershire Sauce, and maybe relish. Worcestershire covers the vinegar taste of the sauerkraut, and the savory-bitter of mustard. Obviously personal opinions vary. To each their own, and all that.

I've recently also started to eat hotdogs with only mustard, actually, but only because the place I volunteer at only has ketchup and that weird relish as alternatives, no sauerkraut or banana peppers. Surprisingly though, their bun is a top split kind like here (except, well, still processed/store bought texture).

I'm from Massachusetts and this type of bun accounts for about 98% of all hot dog rolls sold, it is next to impossible to even find a side split roll. By the way, if you think it's good with a hot dog, you should try it for a lobster roll!

I use only mustard on my hot dogs, too. I don't use ketchup because I don't like the flavor. When I want a touch of sweetness on my hot dog, I just caramelize some onions and put them on there. Much better than ketchup ;)

I heard Pat Sajak say not long ago (on Wheel of Fortune, no less) that putting ketchup on a hot dog should be illegal I agree, but I do like chopped onions with the mustard (sometimes pickle relish too, but not too often, just for a change of taste).

Protip for anyone who doesn't like pickle relish (like me) but loves spicy food: Try some habanero relish, it comes in a squeeze bottle in a lot of places and doesn't have the tang and general grossness of pickle relish while also avoiding most of the texture that is also a bit of a negative for me.

What I love about this is that the bottom is flat so it doesn't roll, and the cut is perfectly centered. Why oh why do bun manufacturers make one thick side, and one wimpy side that rips so easy? Never understood it.

It always makes me think about what is the audience target of Chef John when I see him still using imperial units. This is because almost all internet users with english as a second language use metrical system, and even do soa great part of internet users from the Commonwealth. And hot dogs being eating all over the globe, why no metric units?
