You ve come a long way baby! Reviewing Spruce Tip IPA. I vividly remember trawling the pubs and clubs of Dublin with you, 20 years ago when either of us would have happily drank a Heino from an ash tray! I guess that was your apprenticeship and stands you in good stead for craft beer reviewing. Keep it up, cracking work

Yards brewery in Philadelphia brews a spruce beer based on Benjamin Franklin's original recipe called poor Richards spruce ale. I can smell and taste the spruce and molasses but not in your face as it sounds like your beer was. We have several in the US that make a version of spruce beer but haven't had many. Cheers!

Never brewed the Spruce Tip IPA Glenn but I have a recipe for it in Greg Hughes Book, Home Brew Beer. Just asked my mates on What’s App if any brewery in South Africa brews a similar beer and they don’t know of any. Top video as usual Glenn and super professional. I am hoping to brew my first ever Guinness clone soon. Got a standard recipe of pale malt , roasted Barley and flaked Barley with Target hops. Was going with a percentage of 65% pale ale malt, 25% flaked barley and 10% roasted barley and aiming for 45 IBUs. I can’t decide on ABV though. Recipe says 3.8% but I think that’s a bit weak maybe 4.2% is better? Cheers mate👍👍👍

Would love to make a brew with spruce, but last time it came out almost soapy. I dry hopped with them, may try adding them to the hook next tike. Will have to try this one myself anyway to see what can be achieved.

Yeah I've not heard many success stories around homebrew spruce. Generally those spruce tip are only available for a short time during spring, I'm actually thinking of making one myself this year too if I can get my hands on good spruce tips 🍻👍

Hi Glen, curious about the pine tips in this beer. Does it have any of the flavour profile of say a retsina wine from Greece which uses the Aleppo pine (not sure which part but I am guessing the needles?) for the distinctive flavour? Actually, retsina uses the resin, I just checked!

I've no idea Paul as I've never tried that wine but now I want to find out where I can get my hands on that wine as it sounds like I'd like it! Is the pine flavor subtle or very noticeable?

@@TheBeardyManCraftBeers Very Noticeable! Some people find it too 'medicinal' in character. I had a 'contemporary' example whilst on holiday in Greece last year (first time I had been) and personally found it enjoyable but I think its an acquired taste to be fair. Definitely not for folk who like subtle!

Hi Do you test your pH of your mash and adjust to 5.2.

Hi Adam, I try and get my mash pH to approx 5.5 using phosphoric acid, works well for me 👍
