This is an excellent recipe for Squash Casserole. I make this at the holidays or for potlucks and everyone begs for the recipe - even those who don't like squash! This is a super quick and easy recipe to make and your guests will love it! Also, you can make this with zucchini instead or a mixture of squash and zucchini.
Southern Style Squash Casserole
3 1/2 lbs. fresh yellow squash
1 cup sour cream
1 small onion, finely diced
1 cups cheddar cheese, shredded
1 can cream of chicken soup
1 12 oz. bag of Pepperidge Farm stuffing
1 stick butter, melted
1/2 tsp of each - salt, pepper and garlic powder
Preheat oven to 350 degrees. Cook squash until tender, approximately 10 to 15 minutes, drain and mash well to remove all liquid. Mix together melted butter and stuffing.
In a bowl, add cooked squash, sour cream, onion, cheddar, cream of chicken soup, 1/2 of stuffing, seasonings and mix well. Add to a well greased casserole dish and top with remaining stuffing.
Bake at 350 for 30 minutes or until top is well browned. Let sit for about 10 minutes before serving.
