An all-in-one breakfast or an accompaniment to dinner - egg hoppers are a staple in Sri Lankan cuisine. It is essentially a nested egg in a coconut milk and rice-based crispy crepe.

This year World Egg Day falls on Friday 9th October and we've hatched a plan to celebrate.
World Egg Day is a great opportunity for Australians to be reminded about the nutritious, delicious, affordable, and sustainable staple that is the humble egg.
Eggs have inspired some eggs-ceptional savoury and sweet dishes right across the globe and so we'll be celebrating the joy of eggs from around the world by sharing creative ways eggs can be worked into every meal.
Each year, as part of World Egg Day, the Eggsellence Awards are held to celebrate the diversity and quality of the egg dishes in Australia’s food scene.
But this year, a year unlike any other, more Australians are eating at home than ever before. So in collaboration with acclaimed cook Adam Liaw, we've put together a dozen egg recipes inspired from every corner of the world, and we're asking you to help us crown Australia's favourite (and have a go at cooking these egg-citing dishes at home!).

Thank you very much for trying Sri Lankan food, my beautiful native country. Sri Lanka is home to many religions, ethnic groups, and languages. In addition to the majority Sinhalese, it is home to large groups of Sri Lankan and Indian Tamils, Moors, Burghers, Malays, and the aboriginal Vedda. Being colonized by three different cultures has influenced the culture of Sri Lanka to the point that all three are still present in the country today to a certain extent. I welcome you to my motherland Sri Lanka, Taprobane, or the famous "Pearl of the Indian Ocean" to explore more about our habits of generosity, kindness, food, culture, and Hospitality 🇱🇰💓🇱🇰💓🇱🇰💓🇱🇰💓🇱🇰💓🇱🇰💓🇱🇰

So, I'm trying to cook in a hopper pan on an electric stove (ie, with a flat element). Should I give up? My hopper had a gritty texture, and the hoppers I ate in Sri Lanka were beautifully smooth. Any suggestions?

Were you using readymade rice flour or did you prepare the batter by soaking rice and then grinding them on your own? And even though he used water to thin the batter here, we Sri Lankans only use coconut milk to adjust the consistency. It plays a lot when it comes to both taste & texture.

Underneath the hopper and edges are usually light brownish

Usually not so lacy soft and so white. They should be brown in colour at the base and around. Try keeping for a longer time n the batter a bit thicker.
