Hey Mark, I am from Sri Lanka 🇱🇰. Would like to give tips to get more delicious Pol Sambola. If you can find small red onions would be great. If you can chop onions and garlic with salt, it can absorb to coconut easily and get more n more delicious. Use Chilly flakes behalf of chilly powder. Add little bit pepper and dry fish flake (sometime here we are using small dry prawns also behalf of dry fish flakes )also and see the magic. First chop the garlic, onion, salt, pepper and chilly powder or chilly flake. Once it chopped properly add dry fish flake and chop little bit again. Then add coconut and chop or mix with the paste we were chopped the add lime and mix....🙌

Thanks for the tips.. Will the chilli flakes bring out the orange colour? Also is it more spicy than chilli powder? I’d like my little kids to be able to eat too..

@@ShaadHamid Yes it brings the orange colour. As per my taste mostly chilly powder add less taste, but chilly flake brings the real taste. But add spices which able to eat your kids as well. Like if I am making it for a whole coconut, I mix 4 to 5 table spoon of chilly flake. But you can reduce it to 3

awsome video, made my mouth started watering and reminded me of my days in sri lanka. my mom uses a mortar and a pastel to get the ingredients squished and mixed up and she also adds moldive fish (dried tuna) in to the mixture as well. and if you want to keep it for longer just add curry leaves, dried chillies and onion to a hot pan and add the sambol to it and just saute it for a bit. this will last for abt 2 weeks in the fridge.

Heres some stuff I'd do to elevate and make this dish pack full of more flavor. Less garlic and tad bit of Maldive fish, First add all the ingredients then squeeze in the lime juice and mix that's how you get the color without making it too hot . Toss handful of the green bits from scallion.Or you can ignore the onion and use scallion instead. Gives more of a tangy lemony flavor. Use chili flakes instead of powder,one anaheim pepper or Sri lankan green chili (finely diced) will make it more flavorful and colorful

Never seen garlic before, but the core ingredients are red onions, chilli powder, lime and salt. Most famous version is as follow; Grated coconut Chilli powder Lime juice Table salt (some use liquid sea salt as well) Mix till bright orange (we usually put a lot of chilli powder) Add a grounded Umbalakada fish (a dried fish called Maldive fish) Add chopped green chilli and if you want a clove at most of diced (pounded to pulp is better) garlic as it does work flavour wise, but adding too much would kill the taste in my opinion. And now I'm hungry =___=

I came back from Sri Lanka literally several hours ago. Exactly the same thing happened to me as to Mark - the moment I tried coconut sambol there, I fell in love with it. And, now while searching for a recipe, I found this video. I would call it "coconut sambol syndrom" - once you get it, you can't "unget" it.

My mum used to make something similar to this. Instead of Maldive fish, dried anchovies were used. She was from Kerala. I made this once with Maldive fish and didn't like it.

one of my all-time favourite side dishes. I usually add some Maldive Fish and a few curry leaves. You can all add small dried shrimps or dried sprats to give it a little zing. Oh don't forget to add some chopped fresh green chillies if you want it nuclear.

We grind everything in a mortar and pestle: little shallots, maldive fish, fresh red chillies, dried chillies, lime, curry leaves. We don't add any garlic. If there's no fresh grated coconut, use coarse dessicated coconut and refresh with boiling water. Add tiny bit canned coconut cream too, coz the dessicated stuff might not have much flavour. No whole dried chilli - use chilli flakes. And we eat it with bread too, that's actually quite common in SriLanka. The softer, whiter, and less diabetic friendly, the better.

Awesome video! Sam-bola is a big hit with every one that tastes it! As for every other dish each family makes it slightly different. In my wife's family they add some tomato and dried Maldive fish or dried shrimp. try it out there isn't just one way to make it! Bon appetite!

I add everything in a blender but if y're on vacation YOUR WAY of making POL SAMBOL is fantastic. Nothing is wasted, just slurp the fingers. Yummy yum.
