Beetroot and pineapple! Yes! Someone who understands what “The Lot” actually means!!! I miss the days of yore when you could easily pick up a big old dirty burger with the lot from the corner deli. Gourmet burger joints have ruined that fine institution! Good to see this classic recipe being brought to the newer generations and to the world at large! May it be passed down to generations to come!

First came to Oz in 1987 as a backpacker and stayed in Kings Cross where at 3 am on my first night out I had a burger with the lot. It was a revelation! Had pineapple, beetroot and f*ck knows what else in it. So f*cken good

Mind blowing fact: "white sugar" is just brown sugar with the molasses removed. Basically, you only need to buy white sugar and a bottle/jar of molasses, and "make your own brown sugar" when you need it. Came here in the early 70s from the USA where our idea of a hamburger was akin to a cheeseburger and there were "sloppy joes" that were runny mince in gravy poured into a bun (not good). Dad was so surprised about his first "burger with the lot" here that he raved about it to the family including the difficulty of getting his gob around it (and this was the early 70s when there were more milk bars than coffee shops and McDonalds maybe had 10 outlets country wide) and he was a hard man to impress. Impressed he was. The pickled beetroot was a surprise, too.

@@oswaldkite2106 A number of years back i was at bunnings with my kid to get my mum a plant she wanted for christmas. They had pineapple plants. My kid seen it, looked at me, i nodded. Not the plant my mum wanted, but she loved how much of a conversation peice it was when she had people over. The answer to the question why was simply because her son and grandson are idiots. She has grown a couple fruit off it and subsequent other plants from the heads of the pineapples. I have one, but it hasnt fruited yet.

I miss eating burgers that require four hands, a disjointable jaw and a bath to catch the mess. Having grown up in Sydney, going to the local milk bar and getting a burger with the lot was a regular Friday night activity. Watching the old guy at the grill always armed with two paint scrappers master the balancing act of a burger stacked high with all the necessary ingredience to make the classic burger with the lot that was a joy of my childhood. Sadley having moved to the west some thirty years ago I have yet to come across anything that is even close to the wonder that is the burger with the lot and frozen beef patties are to blame! Down with frozen beef patties!

Pro tips - there's a science to this: 1) if your patty is a doming up and coming out a bit like a bowl when cooked use you finger to put a hole in the middle of the pattie - they stay much flatter, which makes your assembled burger less likely to fall apart as you eat it.. 2) use your ingredients to help keep the burger together. A good whack of mayo on the bun followed by the shredded lettuce help the lettuce stick to the bun - some will still fall out but less will fall out. 3) Your fried onion can be a bit slippery too. I always have the egg followed by the cheese followed by the onion and then then. patty on top. The hot egg, and patty help the oinion mlt the cheese and that melted sticky cheese helps keep your onions in the burger. 4) in my view the correct order for the burger is bottom bun, mayo, lettuce, tomato (s & P. optional at this point), pickle, beetroot, egg (beetroot must stain the egg its part of the deal), cheese, onion, patty sauce. I buck with tradition and go the Siriacha and somtimes a little bit of BBQ sauce to sweeten the deal. Yeah I can't be fucked with bacon because I like to do mine with one pan and you can't get 4 burgers worth of stuff in one pan if you add bacon and TBH I don't miss it. 5) As Nat correctly points out, less is more you don't want a fat patty or tons of each ingredient, trust us that bad boy is gonna be 3-5 inches tall top to bottom anyway, much easier to handle if it is nit overstuffed. 6) Use your wanking spanner to press the top bun down with medium pressure after you put the thing together. Crush some of that ingredient make everything a bit flatter and less likely to fall out nas much and easier to get your laughing gear around. 7) wrap that bad boy with a bit of grease proof paper, a paper towel or serviette when you eat it so the ingredients dont slide out the back end while you eat it. 8) This is a traditional food. Not need to be deconstrcuting ut or gucci-ing it up with non traditional ingredients - I'm looking at you pineaple, wagyu beef etc. You could put BBQ sauce and pineapple on a burger with the lot, and it will still be a burger with the lot, but it would be a weird, septic burger with the lot. The *traditional* Aussie burger with the lost has tomato sauce and it fruit is involved it's as a banana fritter with cinaman sugar afterwards. Just sayin',
