Just wanted to say I made an absolutely splendid soup by taking this simple recipe and running with it. I used sourdough bread, a mix of Gruyère and Parmesano Reggiano for the cheese, used 5 cups water and 2 cups apple cider as the base, then added two baked onions that had been diced up (based on John’s baked onion video) and some sun dried heirloom tomatoes. Then we used diced scallions as the garnish and sprinkled bacon bits on top and served it with sippets of sourdough toast. I think it’s one of the best soups I ever ate.

This soup saved me when I have a tooth infection and couldn’t eat anything! It’s smooth enough that the bread can be slurped pass the painful sores of the mouth but filling with its carbs. Plus the saltiness helps reduce inflammation. Thank you Townsend!

A quick warning. If there is ANY Mold on the bread... throw the bread away. Don't just try to cut off the visible mold. Only a small part of the mold, is green and visible. The rest of the mold is oftentimes the same color as bread, and therefor invisible. Eating it can be hazardous to your health. So if you see any visible mold spots, throw the entire piece of bread away. If its just dried out, but not moldy... it might be fine.

Yeah, you can cut out the mold on some specific foods like hard cheeses, but bread is not one of those foods. Mold penetrates much deeper into bread..

Right. People might have done that back in the time, because they didn't know any better, and I guess one could do it if the other option is starvation. But other than that, even if you are low on cash, it's better to throw moldy bread out. And no, cooking might cover the taste but it doesn't neutralize the toxins.

I didn't use old moldy bread but what I did use was the crust from a pizza and used some hard block cheese and honestly it tasted very good. I used sharp cheddar cheese! The pizza bread already had seasoning on it so it just added to the flavor. I also added some lunch meat in it as well and POOOF excellent meal! Thank you for the idea.

Born in Cheshire, UK. Cheese from there was usually quite salty as there are salt mines there. Salt was easy to get and the climate is good for pasture. Cheese was known from there from Roman times and is in the Domesday Book. These days it's mild, crumbly with quite a high melting point. I suspect that back in the day, it depended on the farmhouse. Cheese soup I grew up with - soften finely diced carrot, onion and bacon or ham, add stock and mustard, simmer twenty minutes, add grated cheese off the heat, serve. It's the same principle of using up the bits. I really enjoy your channel, thank you so much for sharing.

Love this; very elegant French restaurant I worked at for a time made a green garlic and parsley potage as part of a roasted chicken dish, and the base for that potage was a simple bread soup not unlike this one. Amazing how much body and richness of flavor you can get from just some water or stock and bread. Bravo!

Answer is easy for me: Because "cheese soup" reminds me of my very early childhood, when my mom served 3-year old me something that looked exactly like the final product in this video. She too called it "cheese soup" but would never again cook it.. Some 30 years later she admitted that what she served was probably a cooking experiment gone wrong and that she had no recollection whatsoever of how she had done this. I think I will try cooking this recipe together with her on my next visit.

I didn't realize how much this recipe made. Between myself and two others, I was able to make three different dishes out of this! The soup for the first night. Second night made a creamy sauce for pasta and shrimp. Third night the remainder went into fresh broccoli. The only 2 thibgs I did differently was blended the boiled bread (to save time) and added heavy cream to thicken it for the sauces after it was soup. Legitimately a great recipe!

So we decided to try this last night. A couple of notes for the modern masses. This is not quick convenient spur of the moment cooking for today's attention span, just because it's simple. Set aside a little time. It's probably easier if you make sure to remove the crust. Assimilating the bread was probably the slowest stage, because we went with fairly big pieces, and left the crust on. If you're near the end and think, "This looks too thin, and I've got more bread. I'll just pulverize it and add it in for a thicker soup!" don't. We woke up this morning and the leftovers were thickened into a delicious cheesy bread pudding.

My parents grew up during the depression in the 1930's when people were starving and my dad often told us about how he and his brother ate carrot sandwiches. He insisted they were delicious! Sometimes when my mom made a beef roast meal he would finish off his dinner with one of his famous open faced carrot sandwiches by buttering a piece of bread on his plate, layering it with the cooked carrots, squeezing mustard over them and drizzling beef broth over the whole thing. I never tried them, but I imagine they were pretty good.....better than going hungry, anyway!

My dad used to make this for lunch. He used what he called 'cooking cheese' Very hard. bought from the butchers and VERY strong smell!! but tasted great! Brings back happy memories.

Cooking cheese? I have not found any but spoken to a few people who remember it. It was a hardish cheese that you 'pared' off chips with a knife. It looked like an orange cheddar. The smell was very strong and pungent. You needed very little in a recipe ( the whole point). It melted like cheddar. Came 8n very big rectangular blocks. I was just called cooking cheese. Mentioned as that in recipies. Bread, milk , heated up. Cut some cheese in the hot milk. Some pepper. Stir until melted. Exactly as done in the vid. Dad called it gypsy broth but no idea why. I wish i could get some of that cheese now!

What the hell is a grocery? Typically we would grow the vegetables on our homestead; but with the winter months coming to an end, our food is dwindling. Our chick's aren't producing eggs in the cold, and our vegetables aren't growing. We have some stuff from preparation for the winter; some grain, a block of moldy cheese, stale bread, and maybe some dried weeds and herbs which could be used for body in our dish. The nearest farmer is 2 days away, 2 days back on foot. What do? Make soup.

PLEASE TAKE NOTE IF YOU MAKE THIS You might want to double check your not using extra sharp cheddar or another aged block cheese. I did and it kept coagulating. Apparently aged cheeses don't emulsify as well or at least mine didn't. I added lemon juice and american cheese to mine to help emulsify and managed to save it but the cheddar still stuck together a bit. Also some shredded normal cheddar to thicken it up a bit. Not sure if anyone will see this but hope it helps.

Creamery cheddar should work much better. It's made partly with cream and it melts to a liquid emulsion in a hot broth, I've often added it to soups. I found other forms of cheddar and even american too clumpy.

Just made this with a sourdough that got tough after about a week, and a block of aged white cheddar we got around Christmas and hadn’t eat much of, just cut off the moldy layer. I used some homemade broth we made and froze about a month ago as a substitute for the water. Very tasty recipe. I added some onion and garlic powder as well as some black pepper. It’s easy to make.

dude if any part of a food is moldy throw it out, you wont see it but the mold is rooted in a larger part of the cheese, so cutting off what's visibly moldy will not help

Water would cause the cheese to curdle into lumps in an attempt to stay close to it's oil after melting. He likely used a heavy cream or homogenized milk.

I believe that "crumb" refers to the inside of the bread. it wants you to exclude the crust. Bakers always talk about the "crumb" of the bread when they describe the texture and air bubble size of the inside part of the bread.

if the old shoe is made from leather you can boil the leather into a meat broth if you boil it anuff you can eat it to (boil it atleast 8-12 hours [add salt after boiling gets really good] add olive at the 6-10 hour mark add cherries 30-40 min. before done if spring,summer or early fall add fresh dandylions to the soup there ya go starving man's soup

@@Scythera99 you have to boil the bread and cheese much longer. Especially if the bread isn’t stale. I had a similar problem making it but I just kept boiling the bread stirring and mashing against the pot and when it was close to looking like the bread was done I added the cheese and stirred it in. It wasn’t as creamy as the bowl he showed but still a really good meal and very tasty.

But you didn’t have Cheshire cheese. I live in Cheshire England and it makes me sad you guys can’t get true Cheshire. It’s white and crumbly and actually slightly wetter than cheddar and not as hard. It’s great to clean the palette after a meal. I actually work for a dairy company in the U.K. and maybe I can have a few words if people show interest in having Cheshire cheese please like the comment!

I've been a fan of Townsends for years, and I feel like the channel has never been more relevant than the times we're living in right now. When we're in a situation such as this, and many of the modern conveniences we normally enjoy are out of the picture, the knowledge and lessons from those who came before us really shine through. I've done this with stale corn tortillas and leftover cheese from a party before! Absolutely delicious with fresh garden herbs (or dried pantry herbs?. A bit of stale wine improves it even more.

It's a change from boiled thin beer ("light beer" in modern america; pretty much piss compared to german or czech beer) with stirred eggs and bread. Imagine that for breakfast in order to prepare for work in the fields

After this whole virus thing is done with, I'm gonna start to learn to become more self sufficient. How to make bread from scratch, make a garden, how to preserve food. Stuff like that.

Just a thought: if possible, better to learn now when times are hard rather than when things resume some normalcy. No return to normal until vaccination. That time frame is 12-18 months lol. Anyway, cheers and good health ;)

Why wait till it’s over? There’s no better time to fill your brain with knowledge than while stuck at home. I’ve been reading up on planted aquarium ecology. Not the most fun topic. But by the time they let me back to work I’ll have knowledge and be able to use it to make planted tanks or even get a job helping at an aquarium. Long story short. Don’t wait man. Start looking into it now.

I recommend crushing in toe of garlic along with the cheese. Makes the taste a bit less monotonous. Also, homemade croutons are a must, especially if the point of the exercise was to get rid of stale bread.

I always loved the notion of homemade food, homegrown food, more so during this COVID-19 crisis! Hard work but it feels great. For me, it saves money and the quantity of the homemade items lasted longer than when I constantly bought said items like bread, almond milk, etc. from grocery stores. I'm no rich lady, but homemade, homegrown comes in handy. I've just finished baking my own homemade bread myself this afternoon. I'll be trying this recipe out indeed! I'll be making more homemade almond milk today as well.

@@nateman10 if you decide to keep making bread, you can buy yeast by the pound. You can freeze it, or put it in clean jars and store in fridge. It lasts a long time in the fridge. Last time I bought a pound, it was under five dollars at a country store. That's as much yeast as 64 of those packets. That's a lot of loaves of bread. I understand you can get one and two-pound bags of yeast online, if you can't find them locally . Until the stores have yeast again, there is also sourdough . I haven't made it but I want to try. Some online cooks have info on a no waste sourdough method, which is better for us all in this time of waste not.
