As a southern man that takes his jambalaya making serious, I always give respect where respect is warranted. I always learn something from Stalekracker and try to incorporate the tips to my dishes. I live in Northern Michigan and I do miss southern and Cajun cuisine!! Now, I just need to figure out why I can’t get live crawfish shipped here.

Native Texan here. One of my first introductions to Cajun culture was when I was in the LSU Tiger Band. On my first gameday, the Louisiana natives and I from my dorm planned on walking to our gameday, but I didn't understand why they wanted to leave three hours early when the walk to the facility was only 30 minutes. Well, our route just happened to go straight through a sea of LSU tailgaters, and after seeing us in our band shirts, errrbody wanted us to eat and drink with them. I think I reached into 6 or 7 jambalaya pots along the way. By the time we got to the rehearsal site, we were pretty lit. One of the best days of my life! Geaux Tigers!

I love jambalaya it's my favorite!!! When I first saw one of your videos, it was crawfish, which I also love. The first thing I looked for was if you had a video where you cooked a jambalaya. My dream is to someday make it down from Minnesota to have a authentic jambalaya. Love your videos dude.

I’m from Louisiana and got burnt out on regular jambalaya years ago.. I’ll still eat it if it’s cooked, but I much prefer pastalaya

This is an unorthodox cooking technique but a lot of competition winning chilis and stew recipes usually have the cooks favorite beer, usually a Pilsner It’s more for the taste of the grain and yeast undertones than the alcohol
