CRAZY RED SHRIMP turns swordfish orange! How to clean a 280 lb pumpkin swordfish!

We caught this 280 lb swordfish in Mid January 2020. It was a "pumpkin" with orange meat, which is caused by a heavy diet of royal red shrimp! These are deep water shrimp and we don't see tons of them but it's always cool when we do! We core the swordfish and ice it overnight in the YETI. The following day we fillet it and Adam from Islamorada Fish Freight takes it to package and ship to Earl and his friends.

Becareful using that wire brush, that wire breaks off. That stuff can really do some damage. Great fish great care and great job

As an ex seafood chef i can tell you a catch like this will usually yeid about 30- 35% total weight. After removing head, fins, tail , guts backbone, bloodline and spine, then skinning and cutting 1inch steaks produces approximately 7/8 lb depending on overall size of fish. So 75 +.

The shrimp are the reason most fish have red meat. We do have white Salmon up here that don't get red but, they are oilier and can be an acquired taste. Big chunks! WoW

This is how to properly process any game fish. Catch, bleed, remove the guts and kidney and allow the fish to chill for 24 hours or more before filleting. Nice job Nick!!

I free gaffed one fishing Cozumel in the early ‘90’s! Mako’s had chased it to the surface and were coming in for the kill when we snatched it from them. It was a orange swordfish and was the best fish I have ever eaten

We use a stainless soup ladle and shàrpen it around the liip and use it to scrape the slime out of the body cavity

It was a private fishing charter so the clients took the fish home, but YES it would be good for a huge fish fry!
