Actually if you watch the Battle of Sector 001, you will see an _Oberth_ class starship in the background firing TNG phasers. Also, the _Intrepid_ class is 343 or 344 meters long depending on the source while the _Galaxy_ class is 640 to 642 meters long. For scale: the _Enterprise_ in TOS is 289 meters long, the new _Nimitz_ class carriers are 333 meters long, and the Nebulon B in Star Wars is an even 300 meters long.

Are you able to do respawns in the ultimate universe mod?

I am, but due to the long time it takes to destroy enemy vessels, I generally don't bother with respawns, as they would make the battles extremely lengthy.
