I worked as an insulation contractor for several years and it appears that you are installing the insulation properly. I can offer you a suggestion to keep the insulation from falling down and it will not cost anything because you already have the needed material. All you have to do is cut the plastic bags that the insulation comes in into strips a few inches wide and staple the strips on one beam, install the insulation and quickly staple the plastic strip to the next beam. This will enable you to insulate the entire ceiling without additional costs. Then you can install your OSB without the insulation falling on you. Good Luck and I like your videos.

Hard and dirty work. I used spring loaded curtain rods ( like for a narrow window) as temporary support for the bats. I then used chair webbing stapled to the rafters, removed the rods, and nailed up dry wall. All this by myself. I also built a couple of adjustable T supports to hold the dry wall for nailing.
