With the slower audio, these new videos feel like your older ones. Which is awesome, and gives them a nostalgic and simple feel; perfect for the Basics series. Hope you keep up this format!

Really like the quieter music, overall gives a calmer, more easily digestible vibe. Not so important for normal Binging episodes, but for Basics it's much easier to rewatch.

I like hearing the cooking/prep sounds (sizzling, chopping, etc...) and how soft the audio is. This format is very nice! And the steaks look so delicious. I'll have to try making some like this soon

I guess it used to be about "cooking WITH Babbish" in a sense. It was much more like being in the kitchen with him than some sort of sitcom thing.

I'm with the others, the audio balancing here is much better. Again the audio for the red wine sauce helps distinguish how hot/crackly you want the pan to be upon insertion

I prefer the no cooking sounds with the chill voice over and gentle music. It’s unfortunate this is the new format. The asmr thing has never been my scene. :(

I think this was a bad compromise between the previous attempt and the usual format. The fast pace and the attempts at chill serenity clash badly and just makes for a worse version of the standard Basics affair. If the choice is between the first go around and this, I choose the first one. But honestly I'd much rather have the old style back. I am not particularly entranced with attempting to meld scripted and freeform content, I'd rather everything be concise.

I enjoy this new format. The slower, calmer narration makes the information easier to follow while the addition of the cooking sounds makes it seem like I'm there learning. I don't think it would work for binging, but is very welcomed in basics. the music is comforting, but a little distracting. overall, a very welcomed improvement

I like the cooking sounds, but I am not that big of a fan of the slower cadence. if it is easier then it is fine but the faster does seam a bit more natural vs stilted

I think I'll watch no matter what, and I hate to be so negative, nor is change a bad thing but I don't love the ASMR style. I don't hate the slower pacing but it feels very sleepy

5:20 how were you able to hold the handle if the pan was pre-heated? Do they make cast iron pans with a thermally decoupled handle? O.o

I respect the desire to experiment - gotta keep it fresh after so many years! I enjoy the subtle end of the spectrum with cooking sounds, but if this is a new format staple, the mixing will need improvement. The last 2 videos have had bits where your voice is drowned out by searing meat, and the cooking sounds become distracting noise rather than a cozy backdrop. Combined with the more monotone delivery, this iteration feels like a hard pivot into the ASMR trend that mutes what I love about your channel/voice. But with experiments comes data, so I look forward to how you develop this refreshed style!

6:30 also can add half as much baking soda as sugar, it's basically a pinch, but also helps encourage browning

Aahhhhh, I think I see what he's going for. Trying to mix his style with ASMR. Soft music, VFX, calm and even narration. I personally prefer the minimal sounds but to each their own.

I've been a long time fan & subscriber and I must admit that your, 'Steak Kung Fu', isn't very strong!☹ Cast-iron is the best pan (after Gold) for cooking steaks & for making pan-sauces.

Not a fan of the spa music . It makes the voice-over feel like you’re rushing. Return to the original please. Is this a solidarity with the writers? Then it’s ok. Ps. Any chance for a booking signing in the UAE?

I appreciate and respect your desire to change up the format. We all need to keep the creative juices flowing. I love the background ambience of the kitchen you have added. However, I very much enjoyed, in your previous format, the faster pace, the humorous hand gestures that replace your face, and the sprinkling of wit and puns. These have all seem to have been sacrificed, I won’t lie, your narration seems like you’re bored. It does not keep me engaged, nor does it get me excited about the dishes you are preparing. Maybe there is a happy medium to be found. Maybe the music tracks could be mixed up to complement the slower pace of your narration. I hope this feedback is helpful. I’ve been watching you for years and love what you do.

ASTOUNDING improvement from the last video. didn't even really notice the change in tempo until a couple minutes in when the extra long pauses began to register (you sped up towards the end which was interesting). the diegetic audio is mixed so much nicer than that first go

I liked the last video where it was more ASMR-ish but I appear to be outnumbered in the comments. What they’re really saying is that they prefer your smart arsery to the natural, soothing sounds of a kitchen lol. Either way, a lovely production👍

I love this style of video making, but I also really love the older style. If I may suggest, why not use this style of video for a new series where you go back to older recipes you've done and make them again but better? Not like the cheesesteaks that required a Botched, but recipes like the older South Park and Bob's Burgers videos where you can just do better. The name is even right there, 'Better with Babish'.

"But what if you have a thinner cut, like a flank steak!" Babish produces a flank steak thicker than the ribeyes my local grocery stores sell "Now, most flank steaks are actually sold in chunks, like this." Babish cuts the steak in half, still 3x larger than any flank steak the grocers sell. Do these techniques apply to steaks that didn't cost a hundred dollars a cut?

There is nothing I despise more than ASMR cooking videos (I've got pretty bad misphonia) but somehow Babish makes it ok. Really hope he doesn't lean into it though

Maybe I've just grown used to your videos on a way that I have an unconscious expectation of what they'll feel like, but this is uncanny in a bad way for me. I was pulled out of the video anytime I noticed and it was pretty often. I recognize I'm in the minority, but I don't think I'll keep watching these if this is the new permanent format.

The music was frequently too loud, but I'm definitely not a fan of hearing the sounds. You didn't do it for years and it's weird to change your brand now. Plus there's no other sound so it feels artificial. Where's the rest of the sound of cooking? Pans, dishes, other people.

It might be my adhd brain but I don't really like the slower, calmer style. I can appreciate that it is more professional, more accessible and easier to follow and understand, but I am afraid it lacks the character and personality that made me subscribe years ago. Again, I understand the appeal of this more professional style both for viewers and creators. It's just not for me.

Pan-searing, yes. But what about microwave-oven finishing the temperature? I read it's perfectly fine as long as there is a way for the moisture to go.

Reduce the wine before adding the stock. It's adding them together that results in an unpleasant purple colour, instead of a glossy brown colour.

The mic going out definitely made me feel that I prefer the voiceover sans kitchen noise. Some sounds seemed too overpowering, especially the sizzling.

Man.... I still cant get into the new format. Its like when you make mashed tatoes and hmm somethings missing, - salt! Then it feels whole and you want to eat all of it. Its like that here, but the opposite of needing something, it has too much of something, but it is slight which will transform the whole dish

Not a fan of the slower asmr format, i lose focus in that mode. this channel is great. I want to be attentive and engaged, not lulled to sleep. Still great info, just gets lost in the dreaminess. Keep the kitchen noises though, that’s a nice add.
