It must make a world of difference, only having a couple of things to do in the cooking process because of all that prepping you'd done. One week I'll try this out. I tend to cook for three or four, have the same dinner two nights running and then freeze the rest - which means I only cook twice a week. That works well for me, but I do feel very drawn to the inside of your fridge after everything's prepped and stacked up in its containers! Thanks, Maddie, for another great video. I always enjoy them, and your smiling face always gives me a lift. You must be exhausted with your baby to look after. I hope she's sleeping through the night now! Warm greetings from the UK.

Hey, Maddie! I love the curry soup idea! I stocked up on red Thai curry paste, when it was on sale, but haven't used any, since. I've gotten kind of bored with the usual dinner fare, so that seems like a great way to mix things up. I wondered why you were scooping the kabocha out (I usually leave it in slices and eat the skin), but it makes sense, now. Thanks for another great video and I hope you are well. Blessings! - Claire

Hi Claire! Oh yes, pumpkin or squash curry is one of my all-time favorites! Haha yes, I like it scooped for the curry, but you could do it with the skin on in slices for the curry too, I've done that as well. The scooped flesh is also great in oatmeal, tofu scramble, soup, chili, so many things. Enjoy! 🤗🤗

@@LetsEatPlants Nice! Squash does add a really lovely sweetness to a curry dish, without having to add extra sugar. I like to caramelize my onions a bit, to help with that, as well. I hadn't considered using squash flesh in oatmeal, tofu scramble, or chilis, but I will have to keep that in mind. I love your idea of the curry being a way to use up random vegetables in the refrigerator. I just put one together in my large crock pot with onions, bell peppers, carrots, a couple red potatoes, and sliced kabocha squash. I'm going to add some broccoli towards the end, because it cooks a lot faster than all the other veggies. For the liquid, I used your trick of doing part coconut milk and part soy milk, to cut down on the calories and fat, a bit. Thanks for that! And I used the red Thai curry paste, along with a bit of extra ginger, garlic, and salt. I had tofu that needed to be used, as well. I have some black rice steaming in my smaller crock pot. I've never tried any of this, before, so I'm crossing my fingers that it works out, because then I'll have 5 servings. I really need to get a pot, LOL. In the meantime...I do love a good experiment :D Wish me luck? Blessings! - Claire

@@LetsEatPlants Thanks, Maddie! I turned out alright. It was really chunky, but there's nothing wrong with having lots of vegetables, right? I kept having to add more and more spices, probably because tofu is a black hole for seasonings. And I thought that 3 hours on high would be plenty, but the potatoes and carrots weren't even cooked all the way through. It was more like 4.5 before they were done. Weird. The rice turned out near perfect, in the small crock pot. One thing I noticed is that the label peeled right off of the curry jar and it's a lovely shape for things like sauces and maybe baby food? I'm definitely going to save mine! I was looking for something to put a little bit of sauce into, this morning (I wasn't feeling plastic) and that would have been perfect. Next time. Overall, my curry turned out okay, but the stovetop does give way more control over the temperature and timing of things. It could be a game changer for someone who really needs things to be hands-off, though. Thanks for asking :)

@@JazzedatHome Oh no! Yea sounds like not enough time for the curry then. 😅 Definitely true about tofu, and also curry pastes can vary in potency! For example, I used 2 tins for my very large curry (which is probably 1/3 cup in total of paste), but for another brand I may only need half that. So I do like to taste as I go. 😊

I think it is similar! Plan to Eat definitely focuses more on the meal planning part. I would say it's better for dedicated meal planners who want a full system for organizing meals, shopping, and cooking. 😊
