Hallo Stefan, I am a frenchman (but with a german mother). Everytime I watch your videos about french knives, it seems to me you like France more than a lot of my citizens do. "Leben wie Gott in Frankreich" says the expression. Thanks for cheering up my mind. I am going to pull out one of my french iron fry pan and cook something. BTW ,my father was a baker and I make knives as hobby, lucky me... Keep up the well done videos, always a pleasure to watch, you set the limit quite high. Olivier

Once again, an excellent knife review! I was impressed by the presentation demo/cutting demo, even before the knife review began. The light relaxing piano music, combined with the background with the French flag, grapes, tomatoes, and baguettes, created a mood of elegance and nostalgia for the knife review. It is obvious that you take great pride in your knife reviews, and it shows in your presentation. Great job, keep up the good work! :)

Please note that traditional French folding knives are mostly used for food and not for heavy cutting tasks. Also, you need to press down the outer end of the exposed back spring in order to disengage the lock which is not that easy to do with your palm as it might look.

A very interesting knife. The exposed back spring looks somewhat odd and almost spoils the lines of the design. However it gives the knife a look all it's own and is a point of difference to other traditional French folders. Thanks for another wonderful video Stefan.

Do you hear atmospheric piano music and automatically start slicing up Hors d'oeuvre every time you bust out a knife? Man that would be something to witness. I think you would be the equivalent of the "most interesting man in the world" (Dos Equis beer commercial in America) when it comes to blades. "Stefan's small talk....has altered foreign policy." and "Bigfoot takes photographs of Stefan." :)

It's a beautiful knife and 12C27, if heat-treated well, isn't too poor a blade material. The exposed locking arm in a knife like this is something peculiar but perhaps acceptable, but I cannot understand a design in which so much cutting edge is lost to the disproportionate ricasso. Looks are important but so is function.
