Leaving the tail on while cooking keeps from overcooking the thin tail end. After that I’m with Stephen on removing tails when using shrimp for a dish we eat with a spoon of fork.

Totally agree. Only leave the tail on for shrimp cocktail or if it’s fried and will be dipped. Tail-on shrimp in a pasta or other mixed dish is annoying and unnecessary. Picking shrimp out of a hot, sauce-laden bowl of pasta with your fingers to remove the tail is gross, messy, and awkward.

Tails on shrimp is ONLY for finger food! In a prepared dish, NO TAILS! Pinch 'em off and save them for stock if you want, but, NOT IN THE DISH!

Stephen vs. Shrimp Tails in your dinner. Imparts flavor into the sauce while cooking....yum. So, whose fingers do you want wading & searching thru the sauce to remove the tails for you? Rather it be my own fingers in my food. Finger kicking good! Otherwise, poke the tailed shrimp with your fork, slurp off the luscious sauce, grab the tail and eat your food. Napkins right there next to your plate. But at least it wasn't some unknown kitchen staffer right after their cigarette break wiggling around in your sauce.
