I appreciate your help with preparing beans for freezing. First time bean grower. Wow they really produce! So excited about the amount but I didn’t know the way to prepare and freeze them. Your guidelines are so helpful. I will be doing this today! Nice video. Thank you.

We used to can green beans when I was a child back in the fifties. We never washed our beans until they were snapped. Mom said never to use a knife or metal on the beans because it would turn the color of the beans. We never put our beans in ice water. As soon as they were cool enough they were packed into jars. We used a wooden spoon to pack them tight. We would then take them outside and put them in a laundry tub and covered them with water. The timing started when the water boiled. She canned 37 quart jars at a time boiling them for two to three hours. Never had a jar go bad and she raised five healthy children on produce from our garden. I was 7 or eight years old and did this every year until I went to college in 1966.

What a great experience growing up! My grandmother canned most of her vegetables and had a “little kitchen” to process everything my grandfather grew. I wish I had that too; however, it’s more efficient for me to freeze most of my vegetables instead of jar canning. There is definitely a place for both. Thank you so much for sharing your precious memories; I smiled through the entirely of your comment and could just picture the experience. I don't remember canning any veggies except beets growing up. Then again Momma & Daddy had a chest freezer & most of the space on the shelves was filled up with other things. I have always enjoyed the freshness of frozen veggies, likely for that reason. I love your towel Steph! I always loved St. Patty's Day growing up because my maiden name was Irish. It made the day a lot of fun. Thanks for bringing out so many great memories of canning/freezing days with Momma!

I just froze 15 quarts of green beans . I froze mine exactly as you did except i didn't flash freeze. I hope they are good.
