Been working in 5stars hotels , fine dining for 12 years . Every thing was perfect . The movements around the table , the distance between you and the guest , the low tune of your voice , the hands and arms movement . The way you react to their answers either when is a yes or a no to whatever you are offering . There is a line between good waiter and amazing waiter . That is the selling which is a talent you mostly have on your character and gets better by experience . And you have that . The only thing i would not suggest is the opening the napkins on the guest lap . that is too much . take care man .

I beg to disagree, placing the napkin for the guest is an extra touch that only the best restaurants do, or used to, and it makes a difference for the guest experience.

@@joeschmoe6306 agree. I worked fine dining for 12 years at a 5 start 5 diamond resort. Open arm presenting was also essential. Never did we hand a guest anything where the back of an arm was facing their body. He did suberb, but he did forgo that step. 4 years I regained and held that DiRona achievement training and mentoring my impeccable teammates for The American Club and Kohler.

I don't know how I came upon this video but I honestly liked it very much. I've been a patron of fine dining many times throughout my life, but never really realized what all you do to make it a pleasant experience for the customer. I always appreciated their attentiveness but this opened my eyes. I must say you guys truly deserve to be well rewarded by the customer. I learned so much. Thank you.

When i went in Austria i really got the vibe from waiters that they were overacting and always mentioning that tip is not included. I really respect the way you did your service here, no pressure on the customer to tip, the service speaks for itself and this guarantees always a good tip

This was fun to watch. I loved how when the wine was being opened the soft music began playing in the background and the process then became a spectacular ritual. It was as though we had just been swept away. I kept smiling while watching this. I noted all the small details--such as wiping the rim of the wine bottle after pouring, replacing a dinner knife with a steak knife and removing the outer knife and replacing it with a soup spoon. This was a really positive experience for me and I thoroughly enjoyed the tutorial. On that note--I've just subscribed. Thanks, Darryl

I work at casual place so its a lot easier but what i find is most important to connect with people. Steps of service is important and clients seen it tons of times, but here is always different person behind it and you should stand for sonething.

Simonas, even if you work at a casual dining you should still try to follow all those steps because the guests see that you are different than the other! But you are right! Personal contact, personality matters a lot and that is how we make more money!

That is exactly why I am changing jobs right now! I spent 2 years here and it was great money and amazing guests but I'm too old for this shit now! If you have learned everything you could from this place and you believe you can find something better, go for it! Just don't quit before you have found the next job! Good luck!

Love it! I was a server in an 'upscale' wine lounge years ago and recently got back into serving. I love the classy and elegant appeal of fine dining, so I've been going over the things I learned back in the day. Though my restaurant is not considered 'fine dining' by any means, I still approach all my tables as if they / we were in this type of environment. This video was spot on and perfect. Serving way " a la carte" was great but there are places where we can't talk at all during the service and while around the table lol. We do not ask if "are you done with.. ", we need to keep an eye on the plate fork and knife and when those are on the positions we start to clear, while informing the next course:)

Great video. I actually like the idea with making chairs stand for the guests. If there were other people in the video, - the learning concentration of the video would've gone wrong. Love all the tech tricks you used in the video too - like suggestions and dialogs. Thanks for doing what you do. Perfect way to learn not only how to be a good waiter, but also how to be a good guest.

I worked in a fine-dining restaurant as a busser, for a few months, but I didn't interact with the guests. Plus, I was supposed to stay out of sight. Roll silverware, deliver bread, when asked by a server, who didn't allow me to approach the tables. I attempted to get a mentor, but I think at this restaurant/ location, the servers, closely guarded their clientele; this meant you became competition with other servers. Nobody backstabbed me, but let's just say the environment, was very difficult to move up. This video was definitely a joy to watch! Brings back memories of watching some servers work their magic, when I did get a chance.

i start on tuesday at a "A sophisticated option for American fine dining" an I am so intimidated by all the things I have to relearn about foods and wines. I have been in restaurantes 12 years but this will be ther highest level Ive taken it to. Love the video thank you for all the advice

I don't drink wine myself and I don';t know an awful lot about it so when customers ask me for a recommendation (If the customer is up for a laugh ofcourse, pick your audience) I point to the most expensive bottle and say "I've heard it's pretty good eh" and give a bit of a smile. I think I've sold more bottles of it than anybody else at my work

It is a good tactic with guests who would take a joke but you have to be careful since not all guests are that type! Still you have done well! It won't hurt if you learn little bit more about wine though :)

Excellent side: 1. You hand the wine menu first and ask If they want water or an aperitive: Aperol/gin-tonic/prosecco 2. With handing the food menu, you offer the "special" of the day 3. If they do not make eye contact or close the menu, do not ask If they are ready to order. 4. For the main course, you can also offer side dishes such as fresh salad/grilled veg, baked or fried potatoes, and boiled rice/veg. 5. The more grease on the meat, the higher body of red wine Is required. 6. Don't mention when the food will be prepared until you are 100% sure, however, not even then :slightly_smiling_face: 7. Salt and Pepper should be on the table when the main course is served. 8. No need to ask If It was too little or too much, only makes the situation uncomfortable, however, you can ask If everything was good. 9. Do not bring an extra plate for the desert If It Is a couple, ruins the magic. 10. Much more that can be done then what Is shown In this video, specially In fine dining. Good side: 1. Always be polite 2. Good table setup 3. Change cutlery in between meals 4. Ask If they are enjoying their food 5. Ask If they want a break In between courses (important) 6. Leave the cutlery to share a dessert. 7. Preserve the bottle for the next days 8. Offering liquors and coffee after dessert.

excellent demonstration I am newcomer to New York and I want to work as a busboy and having no experience they do not hire me because I get very nervous and sometimes I do not know how to act, or at what time to remove the dishes and which cutlery take or leave aside the problem of language since I speak a little English and my native language is Spanish, there is very little information on how to be a good busboy and this helps a lot I congratulate you, thank you for your advice.

Thank you Michael! I really appreciate you saying that! Watch the videos I did for bussing tables and take notes! Learn everything I am giving you and try again to get a job! On the job interview tell them that you have studied the job requirements and you are prepared to work hard and to prove to them that you can be great help! Try to stay calm and smile! Be positive! Keep trying if it doesn't work from the first time! To get a good job in the States I had to go 7 times to the same place to convince them to give me a chance! Good luck!

Seriously when I get Michelin service, I get annoyed. I do like being checked up on, but I teach my team to pay attention to guests' needs and anticipate their wants, not investigate their needs

Anticipation is the biggest thing in service and you have gotten it right! Still, those are standards and restaurants stick to them, because it is proven through the years that they work, plus when you are member of LQA for example, you have no choice but to follow the standard!

I started training today for the first time as a server. I took advantage of the strange times we're in now where a lot of people don't want to work and I figured the place that hired me was probably really needing servers and that I might have a chance and it worked!! I'm starting out at a good place too; God works in mysterious ways.

The Waiter's Academy Thanks so much!! I know that I have been very privileged to get this job, o was actually quite shocked myself when they told me that they want me. I only did volunteer waitressing this year for 1 night and when I was 12 I would help my mum at the café once a week for like 2-3 months and of course the owners being french I have been learning french for 4 years. So i guess that was an advantage. The job i had was just at a vegetable shop but i had that when i was 13 years old I've got a lot of customer service skills up my sleeve already! Would you be able to tell me some advice before my first night? Their restaurant opens in a few days and are there some things I should keep in mind or some tricks perhaps?

@@justinvasquez5280 Hi Justin, there is a simple explanation of why this is done differently! In the USA most of the restaurants use trays to carry the food out to the table! You put the tray on a tray jack and you serve! It makes sense you serve from the left because you don't interrupt the guests if they want to take their glass at this exact moment for example! From the left, the intrusion is much less! But in Europe, this is not the case because the food is taken out of the kitchen 90% of the time with hands only! Now, when you carry three plates, how do you carry them? You have two plates in your left hand and one in your right hand! Try serving with your left hand from the left side of the guest! Not possible! So you serve with the right hand from the right side and this is the standard! Greetings to Colorado! I love Aspen :)

I can only carry three plates and it makes me nervous to try carrying more. Although somebody's always there to follow if you need. I have seen a video of yours where you explain the carrying of plates wich is very helpful. You're very much my go-to guy for all the questions I have. I appreciate your videos and I know I have more to watch which I will soon. It depends on the restaurant you work for! In fine dining the steak won't be ready till I say to the chef that the guests wants the stake now! The waiters do the timing! If the kitchen does the timing it happens very often that the guests in not done with the soup or the salad and the stake is served! that will piss the guest off and all the hell will break loose! But I understand why you asking! I used to work in Bulgaria as a waiter and this is a normal thing! the kitchen works as they want and you deal with the mad guests! Crazy shit! Now, I ask if the guests want to take a break because I know that the kitchen won't start cooking the stake before I tell them too! When it is a busy night and there is a lot of stress in the kitchen I never ask the guests if they want a break! we have to work together and help each other! But still if the guests request a break himself I go to the kitchen and tell the chef that table 20 want 10 min.break and that's it! If you have made a mistake or the kitchen has made mistake and the stake is ready but the guest asked for break....you go to the guest and tell him that you have made a mistake and the food is ready. If he says I don't care I need a break, then you bring the stake back and kitchen will prepare another stake when the time has come! Sometimes the guests will take the stake although they won't be happy! It is a matter of experience! you learn with time!

All depends on the culture of your restaurant. Typically you are able to establish an idea of whether the guest will be ready in 20-25 minutes before you put in their mains. Depending on the flow of your restaurant, you could always establish time constraints with the guest, if they aren't pushed for time to see a show after, or they say your restaurant was the reason for getting ready, error on the side of not rushing them. Typically any diner in a rush, it'll be obvious to a seasoned waiter. In dealing with chef's and kitchen staff, it's not something you can get in huge trouble for,on the kitchen side, however bringing out mains while a guest is eating a salad or 2 minutes after a table said 10 minutes,will land you in some hot water. I'm a 10 year waiter, I'd do what the chef asked and rush my table and explain it to my matir'd or manager. Ask them what to do in the future. Maybe the guests rage and ask for a manager in that moment, which would be ideal, as you just listened to the chef. We are there for our guests and your staff should support you and train you to do so in a way that doesn't make you uncomfortable in front of the guests. There are other ways to go about it, but idk your restaurant dynamic

I am talking to myself in this video but if those are real guests in front of me most of those "THANK YOU" will be actually "YOU ARE WELCOME" because the guests are those who say mostly THANK YOU! Still, in fine dining when talking to your guests you should say thank you as many times as the etiquette requires! Those pleasantries are annoying but they are the norm in fine dining!
