One important thing you forgot to add: for people with a metal allergy (especially to nickel (which is mixed with most silver jewelry)) stainless steel is their only inexpensive option. Titanium and platinum are hypoallergenic as well but will cost way more than any stainless steel option.

I recently ordered a stainless steel silver plated chain from eBay for cheap will the silver plating rub off even if I look after it properly ? I also have a 925 sterling silver chain and love it but wanted a longer chain for cheaper

In my country almost all silver is Rhodium-plated nowadays and believe me, the rhodium actually looks more like Stainless Steel than Sterling Silver itself. The light color of silver actually looks cheaper while Stainless is closer to platinum in appearance.

Sterling silver is much more lustrous than stainless steel. You must be mistaken. A rhodium plating would actually dull it making it look like white gold or stainless steel. Those, because rhodium plating look like stainless steel, look much cheaper than sterling silver.
