I believe Grillo is neglecting to understand that his ability to be a humble guy isn't a weakness and incorrectly tags it as inferior. He was patiently willing to cater to John because it was the smoothest avenue to take with a guy who thinks everyone is beneath him.

As the great Artie said years ago, "John knows marks". John's entire life, he hones in on people who are either extremely nice, have low self esteem/confidence or who put up with endless amounts of shit. He surrounds himself with these types because he knows he can abuse and exploit them forever. He tests people by being rude/inappropriate with them in the very beginning - if they put up with it, he knows he can abuse and belittle that person forever. Steve is one of those people. Also, John's been mocked and abused his entire life - he's ecstatic when there's someone around who HE can abuse, the way the rest of the world abuses him.
