4 large chicken legs and thighs
2 heaping tbsp. tomato paste.
2 stems celery
8 cloves garlic
1 potato
1 medium onion
1 wiri wiri pepper (optional)
5 stems scallions.
salt to taste

Of course, this way is different from how a Trini would stew their chicken. But, let me tell you - I went to a Guyanese wedding and they had stew chicken and of course a hundred different dishes. Let me tell you, that Casareep that Guyanese use, puts the stew chicken on a whole different level, taste-wise! I had that with Paratha roti, hot steaming pumpkin, and that was all I keep eating for the whole night. I loooovvee stew with Casareep. Try, it!

I made this dish today! I added 2 packets of soy sauce as I don’t have casreep. It was delicious 🙂🙂. I grated the carrot and I added one small Roma tomato. It was delicious 😋. Thank you both! My mom died when I was 15😢. Oh how I wish she was here to taste my cooking .

Back home in Guyana my mom would leave the scallion and cilantro at the end for garnish . And we eat with Rotie or plain rice... molly yours look good too. I am sure it is tasty too.

lloyd mitchell says 1 lime is added to the recipe use it to season the chicken. the chicken and garlic is first in the pan. keep up the good work

I usually make chicken stew with the burnt sugar, but I decided to try your recipe and it was the best chicken stew I ever made. I had to use tomato sauce because I was out of paste, but it still came out great! I lightly seasoned the chicken, next time I would season it more.

❤❤❤ Thank you so much for this comment, I was run over several times because many people said that you have to use burnt sugar to make Chicken stew. This is the way Guyanese make Chicken stew and if they have never tasted it how can they know burning the sugar is the best way. So thanks once again, coming from someone who had the burnt sugar way all the time before is priceless.👍

I am so glad I discovered this channel! You guys are doing a great job! 1) What level heat are you cooking with throughout? 2) If I were to add kidney beans (like my mom does) at what point would you put it in?

Thank you, the heat is medium, Unless we state if it's low or high it is always medium, which most dishes are cooked at. If you are adding the raw kidney beans you would have to boil it first and add near end ( depending how soft you boil it. If it is the canned soft ones, add it about midway of the dish.

My mother used to use fresh tomatoes and tomato paste and fry the chicken first before the ingredients also yes she marinated the chicken a little with salt and thyme an black pepper, this looked delicious too

Heat up oil in pan Add brown sugar Let sugar turn slightly brown Throw in canned beans Plus a squirt of ketchup Garlic, thyme, onion, pepper etc About 1/4 cup water Let it thicken And bam stewed beans

Hi, I have made this recipe so many times. It’s just the way my mom makes her stew chicken. It tastes the same. However, how can I get my stew to have more gravy? I like to eat this with roti but I never seem to have enough gravy.

Thank you, if you are adding potatoes it will make the gravy thick. do not boil the potatoes too soft as it will absorb more gravy. If potatoes are not added then you should not have that problem. You cannot let it evaporate ( dry down ) too much at the end as well ( with or without potatoes ) because the gravy will become thicker as it cools.

Casareep is made from Cassava, it has a bittersweet flavor and is used flavor and color dishes. It also has a unique preservative quality which it gets from the way it is made.

Sooooo I tried this recipe and let me tell y’all this is the stew flavor I been looking for all my life as in trying to make it . Frying up the tomato paste makes all the difference . Before I use to add the tomato paste when I add the water and the flavor of my stew was never nice

🙂 As I said different people cook stew using different methods, this is the way we (and the Guyanese majority) usually cook it, and it is delicious.

That's not stew chicken you have to season chicken first then brown sugar in oil like we Trini do.

Ok, if you say so, then I guess you add some bandanya and some more seasoning when you ready to actually stew it, right? gotcha.

renny kali Did he said that he was making Trinidad Stew Chicken? I dont think so! I do understand that this nice gentleman, was showing us, HIS way of making "Guyanese" Stew Chicken, NOT Trinidad Stew Chicken! Almost everyone that I know, whether in Trinidad, Guyana, or wherever, cooks and do many things differently; even in Trinidad, some people don't use oil, to caramelize the sugar when stewing chicken. One of my friends, usually makes caramelized sugar ahead of time, without oil; pour it into a bottle, and kept it in her pantry, for making black cakes, and stewing meats etc. As I've already said above; many people do things differently, so learn to respect them, and you may learn something new, and interesting; you never know! Not only people in Trinidad, can stew chicken, or cook, (many can't), and you don't HAVE to use oil; there're many ways of doing something. So please move on, if something don't suit you, but don't complain!

Trini way is nice too but I prefer Guyanese stew chicken. My kids will sometimes request their dad’s stew chicken (Trini style) but mostly they will ask me to make Guyanese style.
