A few slices of King fish were fried dry, then converted to a rich hearty gravy.
Fried King fish
*5 seasoned slices King fish
*Seasoned flour to coat for frying ( I used curry, black pepper, and cornmeal)
*Oil for frying
Gravy
2 tbsps flour
1 onion
6 - 8 garlic cloves
4 chopped seasoning peppers
Ginger
1/2 Bell pepper
Thyme
1 tomato
Few okra
Piece of butter
Green seasoning
Chadon beni
Cloves
Salt & pepper
Method
Add flour to a dry hot pot, and parch until it becomes a medium golden brown. Add butter, and allow to melt. Mix well. Next, add onion, garlic, peppers, ginger, thyme, okra, tomatoes , green seasoning, and some chadon beni. Allow to cook for 4 - 5 minutes, then add enough water, cloves, salt and pepper to make gravy. When the gravy starts to boil, add the fried fish and remaining chadon beni. Let boil for about 2 - 3 minutes, then turn off flame.
