Note: Cooked this last night and the glaze burnt. Do not turn your oven up to 180 and put the ribs back in for 20 to 40 mins just leave it on 100. The text in the video needs to be updated.

I tried this recipe with 2.8kg bone in brisket. I seared the surface in hot oven to give that BBQ look and seal in the meat juice, then followed by 8hr slow and low roasting. It turned out to be amazing with tones of succulent meats and a jug full of incredible beef essence.

Love your recipes Food Tube!! And your plethora of Chefs is amazing!!!! One thing I would love would be for Food Tube to have a special appearance by the Fabulous Baker Brothers. They are amazing cooks and the back and forth banter between the brothers would suit this channel really really well. Just a suggestion as I know this channel is already chocka block full of talent.

Jamie, My name is Shae from NZ. I've been watching you for along time, but this dish is especially simple yet elegant, and absolutely gorgeous. I threw in the portions with the best perspective I could without even really tasting along the way. I know I shouldn't, but I had the trust! and maybe partially a test ;) it all came together so picture perfect that my partner and I literally jumped for joy! Your idealism for nutritional wellbeing, culinary institutionalism, sustainability and ethical mentality is worthy of high accolade. and then you make that rustic, simple and accessible with big flavour! Kudos! Rant over, lets us Know next time you're in NZ and we'll take you out for some foraging. Chur

This looks amazing! Slow-cooked short-rib is my favorite kind of beef. If you want a slightly more "Asian" sauce, when you're making the sauce with the beef drippings, use soy sauce and sugar (typically a 2:1 ratio), black pepper, garlic, and maybe a dash of sesame oil. How much you add in depends on your liking, so taste as you go along.
