Why do SS produce an all copper column and the fill the majority of it with Stainless Steel saddles ? Is this just a cost cutting exercise or is there a reason for it and would there be ay advantage to fillig the whole column totally with copper saddles .

That is a very good question, like you I expected it to be all copper. I think it is a cost saving thing, but Still Spirits may say it is because since the T500 is all copper, there is no benefit for all of the packing also being copper. I use all copper SPP in mine and it has raised the purity and ABV, so I am a very happy brewer.

Do you need to do a vinegar run and a sacrificial ethanol run?

Personally I would with any new equipment. Interestingly Still Spirits put in the manual for their Air Still Pro that you should do a vinegar run before using it! Yes, it does waste time an money. But, to do a simple sugar wash should only cost around $13, then around $10 for the vinegar and around 20 days to ferment it out. So while annoying, it doesn't waste too much.
