@stillintheclear do you add the water to proof down gradually? Or all at once? I’ve seen so much mixed information about shocking the spirit

I do it all at once and have never had a problem.

I would say you can go higher than 40% on a run as long as you don’t have an open flame 🔥.. second runs should probably be done in those electric side heating stills.. what are your thoughts?

40% ABV is the absolute lowest percentage a liquid can be, and still be flammable... below that, fire behaves as if it's water

I use the tails to proof mine down and the rest of the tails go into the thumper. I don't waste anything.

Yes, the "40% max rule" is because of the fire-hazard issue, as you said. Reason: Alcohol is flammable at 50% (100 proof.)

I've lit 40% abv vodka on fire. It's still flammable at 40%. Though less stable.

Proofing/Dilution Formula: Alcohol meter reading ABV divided by desired ABV multiplied by amount of distillate minus the amount of distillate = amount of water/tails needed for dilution. ABV in mash/wash calculation formula for hydrometers and refractometers: Original Gravity minus Final Gravity multiplied by 131.25 = ABV% in mash/wash Specific Gravity forumla for refracometers using Brix: Brix units mulitplied by 4 = specific gravity reading.
