Randy, Add a Pinch of Salt!! ALWAYS! (In this case peanut flavor - add a tiny amount of salt) Think Cooking Recipe. It Balances flavor. Another technique is to add likker to the sweetener (sugar). Then add it back to the batch so as not to dilute the product. Cheers Buddy! Sorry I missed the live stream... Best wishes on the anniversary!

Olive Nation extracts are the best, I use them all the time. 1 1/2 cup sugar 1/2 cup light Karo syrup 5 cups water Simmer 5 minutes let cool a few minutes then 1/2 tablespoon your favorite extract. Makes 1 qt of flavor, I add 1 quart of likker and let it sit few days. It's fantastic

I have fermented my leftover sugar syrup from preserving peaches and the peaches definitely came through a little bit ,and had less yeast taste so I started adding a jar of my preserved fruit or jams to all my sugar washes .......just did my first grain mash but I was thinking that when I do my next preserving and have leftover sugar syrup I'll add some corn to it and see if flavor comes through with the corn

Best flavoring I found was Australian red rum ,but I found what I'm pretty sure is American white oak hear in NZ and there's a good size branch came down in a storm so I would really like to develop a nice sweet recipe and good technique to use with that wood ,I have posted a couple of crappy videos of my experiments with different woods I have around me for ageing , going to do a update in a week or two . And I was going to instead of using a coffee filter and activated charcoal for filtering this next batch I'm going to get a bit of that oak to make charcoal and try the Lincoln county process ..... I have been using my preserved fruit in my sugar mashes but just did my first grain mash the aroma is so much better ,so I have to start developing my tasting skills and knowledge of what flavors different grains use. Sorry for rambling I'm on a hi arfter a successful first grain mash,my second pumping away now and finding some oak I can take all I want of ..... It's been a good week 👍😁

PS was thinking of adding a teaspoon of manuka honey to my whiskey after two week oaking and putting in bottles ,it should dissolve and bring out some sweetness ,be interested in your thoughts if you have ever done that

I think your right it will dissolve and should be nice i have back sweeten with maple syrup was very good so i would say honey would be good cheers
