It also helps bind the marinade ingredients together so it "clings" to the meat. It also adds a protective coating on the outside so the juices stays inside the meat.

People put chicken in everything with a second though to the shadowy lives those critters live locked away in dark factories (broiler farms) and somehow raised and tended so cheaply that they are sold for a few dollars apiece dead. It's Easter time so think of the billions of these guys who will go through life without anything but dark miserable lives when you see Easter chicks this year or when you order chicken anything. I 'm making this with tofu but it would probably be good with fish too. (Fish don't come from dark factories) or the meat from a rooster on grandma's farm.

Yes, with extra firmed type tufo is good too. I would deep fried cubed cut tufo first. So that they will not crumple when doing stir fry. Oh yes with fish, also good suggestion. I would do the same, deep fry sliced fish fillet before stir fry. Thanks for watching.
