HAPPY WOK Thanks, but more necessity based on what was in the pantry rather than creativity. Perhaps, an intro video going through the basic, common ingredients used in Chinese cooking would be handy.

i made it tonight...i didn't have black bean but i used a bit of oyster sauce and i put onion and mushroom 😋 came out good. i will go to the store and get black bean for next time.

you may omit fermented black beans, but you needed to double your soy sauce. the flavor, come from beef and asparagus. thanks for asking.

Yes, use corn starch instead. I used tapioca starch, because they are highly available here and they cost much less than corn starch. But they serve the same purpose in this cooking. Thanks for asking and Thanks for watching.

Thank you for this recipe Chef Fai! There are so many versions out there but this is just like the Asparagus beef I had in a very good restaurant and have been wanting to make it. Now I can!!! I don't know whether I'll be able to find the fermented black beans so I may have to substitute with black bean sauce. Again, thanks!

Go to your nearest Asian Groceries . I believed , that should carry those very basic Asian cooking ingredients. You needed to have that. Because that is one of the basic fundamental ingredient to make this recipe and other too. thanks for asking.

I have two questions: 1) What is the difference between tapioca and corn starch ? 2) Why add the tapioca starch to the meat, then additionally to the sauce later ?

1) they made from different crops, but starch effect are identical. 2) adding to meat before frying, tents to sealed the juice or meat moisture , also add body to it. while adding sauce later, is to thicken the sauce consistency.
