Your recipe sounds delicious, the time put in preserving the ground beef is well worth it, I love the brown it tip for helping with the texture and giving it a "crunch". I love canning meat and also have store-bought canned meats/seafood, as well as freeze-dried. I just canned more meatballs the other day because ground beef was on sale for $2.99/pound. It was 70/30, so I lost a good bit in fat and water. But they held their shape (I only used meat and seasonings. No fillers, eggs, grains). From about 2.5 pounds, I got 4 pints (8/jar and topped with broth), which will make 2 meals for me. Thickened and served over noodles with mushrooms added.
