I just watched another of your videos today, 7/17/20 and realized your husband had pasted away. My prayers are with you and your family. 🙏 I admire you so much. 1'm 78 and seeing what you do at 71, I know I can get back into my garden and canning. I've never canned meat or dried beans before. Through other You Tubers videos I ordered an All American Canner, it was supposed to be here this month, now I should receive it in August or September. Well I can, can meat and dried beans in the winter. I'm also can buy 5lb bags of organic carrots at Costco. Next spring I will have made my raised beds for gardening. It's too difficult for me to bend over in my garden as it is now and did not plant one this year. You will love your Food Saver. I'm on my 2nd one. You can also dry can all kinds of dried and baked pantry foods for long term storage. You Tube is a wealth of information. We never get too old to learn something new. Have a blessed day!

I bought 50 lbs of pork ribs for 97 cents a pound. They were good but they were full slabs and weren't trimmed very well. Yesterday I took 27 lbs of pork ribs and trimmed them, removing a lot of the fat. I cut the trimmings to make spam and separated a lot of the fat to render for lard. I put 2 slabs in the oven, seasoned the other 2, cut them into meal size portions, vac sealed and froze them. Today, I trimmed out an 18 lb ham, set aside a lot of the fat, cut them into meal size portions and vac sealed to freeze. My husband helped me grind the pork and ham for home made spam and I'm now waiting for it to reach 155° so I can weight and cool it overnight. I'm tired. It's been a long 2 days. 😐 I have to say that I got tickled watching your jars slide across the table. I always put a towel down to keep them in place while I fill them. Tomorrow, on to the pork roast and stew beef for canning. 💕

@@GrannyKarmaOne I'm not that energetic, just determined. I was up for 23 hours cooking and prepping yesterday. Today I'm moving really slow. The spam is really good; not greasy and not as salty as Hormel. I'm happy, it was my first try. I got 3 9×5 loaf pans out of what was mostly 6 lbs of scraps and trimmings. Next time I won't hand grind it all in one day. I hope you have a wonderful day!

And, it makes sure you have meat in the pantry after a storm takes out the power for 2 weeks. Hurricanes and ice storms have done that, here, a number of times. It's heart breaking to lose a freezer full of food! FWIW.... I've canned most of the meats and vegetables that were in my freezer because predictions are we'll have a bad hurricane season this year. Already have had 6 named storms and the start of peak season is still a month away. (Average is about 12 named storms, according to local weather folks.) Do think about canning, as much as is practical for you, of the foods you have in your freezer. Never know when disaster, natural or man-made, will bring down the grid. Glad to hear another person take up the art of canning to preserve food.

Thank you thank you THANK YOU! I have canned 20 lbs. butter & garlic butter, today I canned 8- 1 1/2pint jars of pork. Getting 2 more pork butts tomorrow to can & 2 bags of chicken to can. Wanting to can some potatoes. I took some canning classes a few years ago. And I love to can. Butter was a must for me to overcome the fear of. Thank you for the words of wisdom. I fear not of canning.

Granny, when you put cold jars in a hot canner, you will sometimes get breakage. If you want to cold can, put your jars in with cold water, leave the lid off a little and bring it to a boil before you actually start the canning process. Then add more hot water if you need to, tighten the lid and start your first countdown. Blessings to you and yours. 💕

Beautiful canned meat. I have a lot of my canned pork cubes on my shelves. I especially like to shred it up and have pulled pork sandwiches. FYI- the chicken leg quarters from Walmart for $6 can up beautifully. The leg bones and root vegetables make some yummy chicken stock. You doing very well granny.

Martha, I've canned 10 bags of those over the last couple of months. Make a bunch of broth and rendered the fat. Canned the broth and stored the schmaltz in the freezer. Hard to resist a good bargain.

Breast is my least favorite part of a chicken. Local FoodLion has whole chicken for $.99/lb now. I'd be better of with the dark meat, both in terms of price and of flavor & texture, too!

Yes I can Depending on your altitude your canner needs to cook at a particular weight The weight controls the internal temperature you are cooking your food at you must monitor the weight and maintain the correct weigh during the entire cooking time Altitude is the height you are above sea level you could check on google to find your altitude type in your city and state My canner came with 10 lbs which I needed so folks need 15 ls and I would have had to order a additional weight for that but I only need 10 lbs

Like canning Boston butt, too. Especially when I can get it at good price. FWIW.... I trim the fat and render the lard. No need to de-bubble because there isn't any added liquid to form the bubbles. Thanks for sharing.

Beautiful jars! I am watching this a year later and have just jarred up 5 pints and 6 half pints of pork butt. I seasoned it and will add BBQ sauce when I serveit. I use the half pints because it is enough for a sandwich for me. I hope you are doing well in this Mississippi heat. I'm ready for it to be gone! 😀

looks great but you are never suppossed to tip your jars, just lift them straight up and set them down. when you turn them the juice can get under the lid and either cause it to not seal or give a false seal.

Granny Karma, I found this video at the perfect time! I have a pork butt in the freezer that I paid $.99/lb for and wondered if it could be canned. I have just started canning meat and have chicken and chuck roast under my belt. There is no stopping me now! LOL One thing, when you were talking about the seasonings you put in the jars, you said "1/2 CUP canning salt" instead of 1/2 TSP. I wonder if I could add some Liquid Smoke to the jars or would that be too much? Thanks again for another informative video.

Yes I sterilize All my bottles and I purchased the meat at my local piggly wiggly aka Cash saver check out your local grocery especially one with a butcher on duty Good luck

S. Jones, when pressure canning, it isn't necessary to sterilize jars before filling them. The canning process itself, sterilizes the jars and the contents of the jars. When waterbath canning, if the processing time is 10 minutes or more, there's no need to sterilize jars, for the same reason. It's only when waterbath canning for less than 10 minutes that we should sterilize the jars. Around here, SE USA, I've bought butt for $.99 from Food Lion. Have seen it at Walmart for that price, too. Just watch for sale prices. Periodically, at both of these places, they'll drop the price to a buck a pound. Don't know how long this will last.

Have you thought about canning it cooked as a hot pack adding your broth. You can shred it hot a lot faster than cutting it raw and fighting the bone. Is this possible?
