I wish I found you when my dear Mother was alive. I can hear her now “what’s Darcy making today Connie?” You remind me of her so much Darcy. She was well ahead of herself in food preservation and taught me how to dehydrate and garden. I bought myself my own dehydrator back then and we’d have so much fun coming up with foods to dehydrate. When she and Dad retired, they were blessed with the ability to travel the entire United States…twice , in their 5th wheel. She’d take her dehydrator with her and never stopped doing it. She made jam/jelly, and dehydrate foods from all across the States. Their favorite place for music and food was Louisiana, cajun country. I even have Spoons to play brought back from them as a gift that were homemade from a man they fell in love with their. How I miss her. But you bring her back to me when I watch you. I thank you in so many ways dear for that. I love to dehydrate too…..♥️. I stopped doing it for years until I found you three years ago. You brought that back to me too….👍😄

I found fruit leather turns out better if I put in blender and blend really well. Blend strawberries in applesauce makes the best fruit leathers!!

Just an idea for you that's easier to smooth your food than a spoon. Try an small offset spatula that's used in baking. It has a flat surface and doesn't leave the trails in your food that the bowl of a spoon does.

With the tomato paste i use my candy forms and freeze them. Not only are they frozen and ready anytime they are cute. I will definitely dehydrate some as well. Great idea.

🤣🤣 Loved the intro!!! And "Speed Darcy", when you rev up the video, always makes me smile. Wish I could be that fast, lol. Well, my weekend plans are changing up a bit now. I already have things in one dehydrator, but it would be LOVELY to dry down some salsa, etc. as well. If I want it chunky later, I can always toss in some of my bigger chunks of peppers, onions and/or tomatoes (either dehydrated or freeze dried) when rehydrating. These days, I'm all about being more efficient with my pantry space. Not even remotely into fruit leathers. To each his/her own on that, lol. Thanks so much for all the tips and inspiration! 🙌😄 💖

I just recently got a Cosori and I love it! I tried that white tray once, and it ended up after that being used in the bottom as a drip tray as well. Thank you for the instructions and information. I've gotten adventurous with dehydrating thanks to your videos.

I also have a Cosori which I ordered after seeing one of Darcy's videos. It actually came with extra white trays (not just one). So far, I've found that grated zucchini dries well on the trays. I use a metal spatula and they come off easily.

Definitely doing the tomato paste, that’s a genius idea. I tend to powder just about everything. Greens, fruit powders for smoothies, onions, garlic, etc. I love wasting nothing and my spices like onions, looks, garlic, and ginger are amazing additions to my spice rack. Celery and onion are also the bomb for celery salt and onion salt.

Great ideas! For tomato paste I put the contents of larger can of paste in a 1gal ziplock bag and flatten to the sides and top to bottom. Then I make a Grid with my finger left to right AND up and down and freeze flat. Easy to snap off a serving or two for your recipe.

I make applesauce/puree "leathers" but I put down single portion sized amounts. I also get plain unsweetened applesauce, add apple pie spice boosting the flavor without the stickiness of the flavored by avoiding the sugar/corn syrup they add.

You have to remember that when you see a video is not necessarily when it was produced. I no longer use Cosoris at all. I am back to my original Excalibur and my new-ish Excalibur. It doesn't matter what you purchase. They all work the same - stick with the name brands. Excalibur, Magic Mill, Tribest/Sedona, etc. I use Excalibur and love it. But it's not the least expensive on the market.

Can’t wait to try fruit leathers! Question - you said to store these in an air-tight container, and I’m assuming that means they can be stored in the pantry. Why do these not need to be brittle in order to store compared to other things that must snap in two and have absolutely no moisture in them? Thanks so much!

You can store them that way - but concentrated fruit sugars in this format doesn't mean it's moist. I don't like to keep them too long because I don't think they keep quality long enough. This isn't the same as being 'not fully dry'.

I've also done super easy flavored fruit leather by mixing some frozen juice concentrate into the applesauce. I started having much better luck with fruit leather when I started using an offset spatula to smooth it out and a rimmed silicone tray. (I used some "swiss roll" trays that are much smaller than the Excalibur trays, but we're also much cheaper at the time.)

No - water bath canning any low acid food is not safe. Pressure can them, dehydrate them or freeze-dry them.

You can, but it can be really clumpy because of the natural sugars, so I would only powder as much as you need at any one time.

I just finished my strawberry and blueberry powder. It took 3 days to dehydrate and turned out great! Now…what to do with these fruit powders. I did sprinkle some into my plain yogurt, but it wasn’t sweet? I had to add Cane Sugar to it. I’ll check out your videos to see how I can use them. I have strawberries, blueberries and raspberry powders now, but need to find out how to use them. I know I can add to oatmeal, muffins, but they lack flavor?

Darcy, how would you dehydrate frozen fruit chunks to make a fruit leather? I know you would have to purée them, would you add sweeteners to the purée?

Thaw them first enough to puree them, and I don't add sweeteners to much of anything, but you could if you felt the resulting puree was too tart. You also want to make sure it has some kind of agent that helps make it more pliable - and adding applesauce is an easy way to do both. Or you need to cook the sauce for a bit to develop the natural pectins.

Those silicon mats (or any brand of silicon mat) are a PITA if you have something thing like broth, which equals glass shards while taking off the tray once dry, if done in a very thin layer. Thank you for mentioning to make the layer thick - a great tip!

If you use the can opener to open both ends of the can and then use one end to push the paste out the other end, you can just use a knife to slice off a portion in a nice round circle however thick you want it.

Hard mesh screens are becoming a little harder to find in a good price range as everyone has gone to the silicone (which are fine, but it's a little harder to move around. While parchment paper can work, parchment is not waterproof, so will begin to absorb water, making it susceptible to sticking. Tomato paste would probably be fine, I've used it in the past when I needed an extra, but tomato sauce no.

Thanks for the video. Would you ever use Pam on the (potentially) sticking trays? Or would it give a strange flavor?

Nope - not if you ever expect to store it. It would be fine if you wanted it for a snack in the next day or so, but it's just not necessary.

@@ThePurposefulPantry Thanks; what would be the reason for not using it when storing? I just have such a hard time removing it (completely) from my (un-rimmed) trays, and I am not sure I would make enough to invest in rimmed (round) trays...

Also, I feel you on the saltines & salsa "meals". Mine was scrambled egg sandwiches or macaroni with butter. I just saw a store ad for jalapeño saltines. Who knew?! Anyway, wish I had my dehydrated foods options back then. Thanks again for all you do! 🙏💞

When you put use the fruit leather trays on top of the shelves,do you always then wash the metal trays? I do but think it my be a waste of time/resources if not dehydrating something with a lot of odor like onions or garlic.

I JUST LOST 3 quarts of good gelatinous bird bone broth using the cosori fruit leather trays. all of them just warped in the middle spilling all of the bone broth out. now I have to clean the mess up. WHY?? going to order the rimmed silicone ones now. but this is for the birds. ☹😭

@@ThePurposefulPantry live and learn. I just left a review on them stating that they are crap. never expected them to do that. so I am ordering the silicone ones now. need 6 so I can do bone broth.

Fyi, the fruit leather tray doesn't stick if you spray a bit of olive oil on it, rub all over the tray.thanka

And then you can't store the fruit leather. For short-term fine. But for storage, oils turn rancid. And when it warms, which mine have all warped, they don't always lay flat to have a level puree. They are still not great trays.
