this is a great question. While the exact nutrient density can vary based on growing conditions, microgreens consistently demonstrate higher concentrations of many essential nutrients compared to mature broccoli, making them a nutrient-dense food option. Also, just as with the mature plants, the nutrient profile is different for each type of plant. As broccoli is one of our most popular due to it's high sulforaphane count, I will leave some data I found on perplexity Broccoli microgreens are indeed known for their high nutrient density compared to mature broccoli. Here's a breakdown of their nutritional profile: Vitamin Content Broccoli microgreens are a vitamin powerhouse, containing high levels of: Vitamin A Vitamin C Vitamin K B-complex vitamins (including thiamin, riboflavin, niacin, and pantothenic acid)13 Mineral Content These microgreens are also rich in essential minerals: Calcium: 143 mg per 100g (11% of RDA for adults 25+) Iron: 0.9 mg per 100g (6.7% of RDA for adults 25+) Zinc: 0.37 mg per 100g (3.3% of RDA) Manganese: 0.37 mcg per 100g (16% RDA for adult males, 25.5% for females)1 Additionally, they contain significant amounts of magnesium, copper, phosphorous, and potassium1. Nutrient Density Comparison Research indicates that broccoli microgreens have concentrated levels of nutrients compared to mature broccoli: For 8 important minerals (P, K, Ca, Mg, Mn, Fe, Zn, and Na), compost-grown broccoli microgreens had an average nutrient ratio of 1.73 times higher than mature broccoli2. Can you eat the roots of your microgreen after you wash them of course.

Yes you can and many do! Most don;t take the time to rinse and clean. Since it is so cheap to grow a tray, most of us just cut at the base. My dad love to eat the whole pea when we grow pea microgreens.

The NEW tip for me was if the veggie has a stem, avoid the Microgreen. So many others to explore!
