One of my favorites is sweet potato/ garbanzo bean soup. 1 can garbanzo beans (chick peas) 2 sweet potatoes, cooked and peeled 3 cups water Sprinkle in spices to taste: Salt Pepper Garlic Cumin Coriander Paprika Empty can of garbanzo bean and 1 cup water into a large pot and bring to a boil Drizzle of avocado oil

Add in sweet potatoes, spices, and drizzle of avocado oil. Use an emersion blender to puree, while adding remaining water a little at a time.

Here’s a helpful tip for everyone, especially if you’re storing your beans for an uncertain future. After an overnight soak, drain the water, add fresh, and use a pressure cooker (not necessarily a pressure canner). It saves so much time, and fuel! Cooking times vary by bean variety, but it’s so quick and easy. Imagine tender beans in 4-8 minutes!

I just put in dry and water about one inch above them. cook time varies by bean from as little as 2 minutes to 30. Instapot has a chart on their site.

Just a story for you. Last year I found a couple bags of navy beans that were sitting in the back of a cupboard and to my recollection they were about 10-15 years old. No kidding! Anyways, the beans were in the original package, as I did not know any better back then. I decided to make a navy bean soup with them just to test. To my shock and amazement the soup was absolutely excellent. You would not have been able to tell they were over 10 years old. Who knew that even if you don't do anything with beans they are still good for years and years!

I'm here to tell you...if you live in the South with such HIGH HUMIDITY this would not work. If you live in a dry climate...may be. I don't think any bean would last that long here. I'm in the South...not even the deep south and that wouldn't work here.

@@theIAMofME Wow! With that kind of humidity you would certainly have to use Mylar Bags and oxygen Absorbers to preserve your dried goods, otherwise you would be just wasting your money. Take care and blessings.

We eat primarily pinto beans and I've had a horrible time keeping pintos usable over time. Learning to put a 1/4 tsp baking soda in the overnight soaking water (per lb) has helped tremendously but they still need way longer cook times. I need to learn to use navy beans in more recipes.

How funny that you're talking about grinding up the beans. I'm making red lentil crepes today. You can make pasta out of bean flour. No home mill? You can buy a lot of them already ground, like chickpea flour.

I store mine in 5 gallon food grade buckets. I add some DE and bay leaves to the inside of the bucket then place a large Mylar bag in the bucket, pour in the beans, add the Oxygen absorbers, and seal the bag with my flat iron. I add more bay leaves to keep the bugs away and add a gamma lid. Been doing it that way for years.

I grew up eating pinto and dried lima beans. My mom's favorite was pintos, and my dad's was dried lima beans, with dumplings. One of my first cooking chores was sorting thru the beans, and putting them to soak. I like just about any kind of bean, but I don't like split peas. I've never been able to learn to like sweet peas, cooked from fresh shelled, or canned, yet I love snow peas, and sugar snap peas, especially in stir fried dishes. One of the coolest things I have learned about cooking with dried beans is that when you serve then with rice, you actually are getting a "complete protein". I just did a Google search to find the name of the cooking show on PBS, it was the Frugal Gourmet, and that's where I first learned that about beans. I actually met the host, Jeff Smith when he was doing a meet and greet at a cooking store in Philly in the mid 80's. Sadly I no longer have that cookbook. He did a great number of dishes that included dried beans.

Leisa, could you do a Mylar Bag 101 class? How to fill, add oxygen absorbers, and seal. I am a bit intimidated by using oxygen absorbers as I know they go bad quickly…… This is something I have absolutely no experience or knowledge in and would love to get familiar with this type of food storage. I have a number of beans in their original bags…… Thank you 😊……….

Beans actually if stored properly, they’ll last for 30 years. My church has tested them and that’s how long they’ll last.

LOVE beans. Chili, hummus, refried beans, red beans & rice, split pea soup, bean & bacon soup... and my husband has a secret passion for beanie weenies on nights he has to feed himself. I have a sort of 3-way rotation system: dried in storage - dried in kitchen pantry - ready to eat on canning shelf. For daily use, I prefer the convenience of ready-cooked canned beans and I always keep several assorted types on my canning shelf. I love to can beans starting with dry beans and whenever I have an empty space during a canning run, as long as the timing is a correct match, it is so easy to just fill a jar with whatever type I might be getting lowest on and add it to the canner!

We always sorted, washed & soaked our pinto beans (which we eat a lot of) with a pinch of baking soda, overnight. Then we rinsed & added fresh water & cooked on the stove. It only took an hour for the beans to be done. We did add salt just as they were softening & then completed the cooking. Oh they are so yummy☺️

I've been learning about beans and lentils over the past year. Cooked and cooled, they're a great addition to salads. Also cooked brown or coral lentils added to chili stretches the ground beef and you don't really notice they're there.

I started my pantry with canned beans. I thought having a back up while I perfected my bean menu would be a good option. Now I have both and it feels good just to have rice and beans as a base for food security. TY for the information.

I live in the Pinto Bean capital of the world!! No joke that’s what my tiny hometown is known for. We love doing a big crockpot of pinto beans with cornbread on the side. Then making bean burritos for lunch the next day. Then if we have any leftover we make some yummy soup with them kind of like a tortilla type soup. Yum!! Dang it now I’m hungry 🤤

Yassssssss, everyone always says 5gallon bag in the bucket but I do one gallon bags and will put them in half gallon ball jars after I open the bag because I rotate my pantry

How very timely! I just picked up a variety of beans from Dollar Tree; 1 lb for $1. Can't beat that! I soak them for 36-48 hrs changing the water once during the soak. It only takes 1/2 hr cook time that way. Then they go into the dehydrator and voila! Instant beans!! They can easily be ground up at that point to make bean powder for, well, anything. I throw these beans into just about everything. The long soak also helps with the 'gas' issue!

Thank you for the important point you made: beans must be soaked and cooked before being used as powder or bean flour, especially is using kidney beans. Red kidney beans contain relatively high amounts of phytohemagglutinin, and thus are more toxic than most other bean varieties if not pre-soaked and subsequently heated to the boiling point for at least 10 minutes. The US Food and Drug Administration recommends boiling for 30 minutes to ensure they reach a sufficient temperature long enough to completely destroy the toxin.[2] Cooking at the lower temperature of 80 °C (176 °F), such as in a slow cooker, can increase this danger and raise the toxin concentration up to fivefold.[3] Canned red kidney beans, though, are safe to eat straight from the can, as they are cooked prior to being shipped. As few as five raw beans or a single undercooked kidney bean can cause severe nausea, diarrhea, vomiting, and abdominal pains.[4][5][6]

I just put dry pinto beans and seasoning in my crock pot sometimes with ground turkey or chicken and cook over night...no soaking...its the lazy convenient way for me...they are ready in the morning....then i portion them out in containers and put in freezer. I microwave as desired lol. I usually have some each day. :)

I vacumn sealed pinto beans in 2008. I used the attachment from my food saver in quart jars. I've cooked 3 quarts of them in my pressure cooker with no problem this last 2 monthes.

I love your posts and the posts of others that seem as if they're on the same page as I am. They're just down to earth common sense things. I've always liked to learn and pass it on. I ran across a prepper page the other day. There were lots of posts that either offered advice or shared ideas. I thought I'm old and was raised making something out of nothing, I might have some stuff in my head that some people would appreciate learning. Well, I think I was on it almost 2 weeks. Some people were nice. Most just wanted to brag how many 5 gallon buckets of rice and beans or how many boxes of ammo they had. Just the mention of getting a tablet (the kind you write on with a pencil) and planning out what you would need to get by on from one gardening time to the next was met with a comment about how stupid was I to think tablets would still work. I explained what I meant and said for instance if you want to have green beans one meal a week, you need to put up or buy 52 cans of green beans. All most of them talked about was having a year's worth of toilet paper! It's been way over a year since we were told to 'pick up a couple weeks worth of groceries just in case'. This is even more likely to happen again and wouldn't be near as much of a surprise. I finally told myself the entertainment value and anything I might glean from the page wasn't worth some of the ignorance and I mean simple ignorance not stupidity or meanness that I was coming across. A suggestion that learning how to make vinegar for tinctures just in case the drug stores were cleaned out again brought bunches of comment like I have a year's worth of everything I'll ever need. Good luck with that. A year is shorter than it looks. I've decided to pay more attention to people like you that seem to know what they're doing and hope you have better luck than me.

Howdy! I am literally sitting, surrounded by beans! Pinto, black, pink, cranberry, navy. Great northern, mayocobo, black-eyed, 15 bean, kidney, red beans. They are going, dry, into half gallon mason jars-sealed. Decided on that method after watching you. Will cook & can a bit later.

I actually just found some online at tractor supply. $11.99 for 6 jars/lids 1/2 gallon size I can order up to 13 boxes to be shipped free to my local store. If I order 14 boxes I get charged some crazy high shipping charge. So I simply made two separate orders...free shipping!

Shut the front door! You always make me laugh. I can Hidatsu Shield Figure beans in an onion broth. When I open them up I sauté garlic, more onions and chopped kale, then pour in the beans and sauté until thickened. Yum! I’ve served this to company and it’s always a hit.

To reduce “after affects” adding 1-2 Tbps vinegar while cooking. It doesn’t change the taste.

I have almost 70 lbs of assorted beans/peas/lentils in storage. Currently, I vacuum seal in 1 or 2 lb packs then store in a heavy duty rubbermaid style tote. But you are correct - I've found that vacuum sealer bags can eventually lose their vacuum tightness. I check them several times a year and move any that look like they are not tightly sealed into my regular kitchen rotation. Any new supply I add to replace ones I've used I'm going to switch to the oxygen absorber/mylar bag method and hope that works better.

I have a bunch of dried beans! Love them! Giant Greek beans, limas, cranberry, black, garbanzo, beluga lentils, orange and green lentils, Christmas limas, orca calypso, flageolet, navy, split peas, and tons of pintos. Oh and soy beans! Black and white. All mine are in mason jars with oxygen absorbers... before I knew better! LOL 1 Pound in mylar would save so much space! 😂 Live and learn. I do like looking at them, so pretty. 🙃

Great info! Ty! I have a dear friend from the hills (which r actually mountains) of Eastern KY. She told me how to cook white bean patties, her family ate for sandwiches! U make them exactly like potato pancakes, using leftover white beans and add onions, milk, egg and flour and then fry them! Make the batter ‘stiff’ or they will fall apart. Then put them on a bun. Good eats!

They are a great investment and I own a FoodSaver myself. However, I do not use it to store food in vacuum packed bags for long term storage. ... The problem with the plastic bags is that they will eventually lose their seal over time.

I love black beans and might want to eat them at a moment's notice. So, I can them in pint jars so they are always available to eat on salads, in casseroles, etc. Love them!

I don't know if this will help anyone but, I love whole dried peas. However they don't seem to rehydrate as well and cook as tender as beans. My easy solution was to soak and cook as usual, and then use the stick blender and puree them. Works well. (:

I ended up with to many 5 gal mylar so i cut them in quarters and iron the bottom and the edge make a perfect size fore wheat rice and flour etc..

I've been following your page for a little while. I appreciate all of your time and knowledge. I have a question. When harvesting (fresh) peas (black eye, sadandy, butter bean, zipper, and purple hull) from the garden, what is the best way to preserve them? Freezing? Canning? Dehydrating? If dehydrating is best, how do you reseal after using a small portion? Can you point me in the direction for helpful videos? Thank you so much for helping!

Personally, I freeze my lincoln peas. I don't grow the others. When it comes to canning you need to dry them first. I think dried beans are the easiest to deal with. After you open the container of dried beans, all you need to do is close it again, air tight. If you want, vacuum seal the container.

cheap an I love beans...yes thow away the soak water .Dried beans and peas contain anti-nutrients, which are naturally-occurring plant compounds (i.e., phytates) that can limit the body’s absorption of nutrients from these foods. Soaking beans overnight, discarding the water, then cooking them in fresh water can help reduce the amount of anti-nutrient compounds. As an added benefit, it can reduce the complex sugars in beans that are linked with gas and bloating

I learned the hard way about not adding salt while beans are still cooking and softening. Had to toss them after 6 hr cooking.. hard as rocks.

Be careful beans do dry out, if not nitrogen pack. Loss of bean moisture. You can grind them , First break up the beans. Then run them thru grinder coarse, then fine. DO NOT GRIND AT ONCE. Or you will be passing wind 🌬 a lot.

Leisa, if you vacuum seal beans in jars, do the same rules apply in not stacking jars in a double layer so not to have a broken seal? Should you remove the rings after sealing?

I have old beans for many years I guess I will grind them for flour. Thank you. Can you put the dried beans in a jar and use the vacuum seal them that way? How long would they keep? If you can dried beans dry how are they when done. Are they hard? T hank you so much

New to your channel, so forgive me if I ask a lot of questions, but you seem to have a wealth of information! Do you have a dedicated video on vacuum sealing in general? Such as what should and should not be vacuum sealed? I’ve heard not to vacuum nuts, chocolate, dried fruits such as raisins, apricots, etc. because of oils and moisture. Thank you in advance!

Not yet, but i'm working up to it. I do vacuum seal chocolate in mason jars and they do fine. The rest of the items you mentioned I don't vacuum seal for long term.

I would like to watch some of them and learn. Talking mylar bags and vacuum sealing bags is sometimes confusing to newbies. I thought you didn't need O2 absorbers when using the food saver for jars or bags. It seems like you said add absorbers to mylar bags and vacuum sealed bags. I could have heard wrong. Learned lots today but little confused. Do separate videos on each type of bag. Do i open all my vacuumed bags add 02s and then reseal? Now I know why not to keep in store bags. I had asked this question a few weeks ago.

Remember, beans are in incomplete protein. Rice will complete it, but I don't know required proportions.

If you rehydrate your beans or lentils, can you over hydrate? Is there a problem placing beans or lentils in water for 24 hrs. 3:00 pm the day before then cooking dinner at 3:00 pm next day?

So what can I do as I have already vacuum sealed in mylar and put a O.A in the bags, buckets and put them in my green house in -10 degrees below in the winter for a couple of weeks. I would hate to grind up a few hundred pounds of bean flour. I think I will open one of the bags and see what it looks like. When I vacuum seal my mylar bags of beans are they are rock-solid. Just like the ones you can order online.

you need a burr grinder, like a wheat grinder. This is the one I own. amzn.to/35cWjiG We are doing a weekly "home ground" series on Sundays. We'll be moving into grinding beans in July along with the wheats.

I live in California and it gets hot here. Today was 107 degrees. I only have 1 window air conditioner and it only keeps my living room cool. My three bedrooms are so hot. Question???? How do I store beans and rice so they don’t get hot and moist????

Ok so I have one question.... I have several beans in the store bought bags sitting for over a year... and then I had one 5 gallon bag (original bag) and several mason jars with the beans airtight, but sitting on a shelf in the kitchen where there is light. Are these any good? Should I try and cook them or just grind them? Or toss them? Thank you so much, I really appreciate your videos!

Grab a few, soak and then cook and see if they rehydrate. That will tell you. If they don't, you can grind the rest

I have no idea if they are any good. YOU will have to test and see. She told you how in the video. One thing I will say...don't store you beans and rice in a room with LIGHT and not in AIR tight storage. Go to a big box store and get some heavy contractor bags. If there is light in the room you are storing stuff in...STOP IT! If you can...put these bags with thump tacks over the window(s) and black out the room. Depending on which direction the windows are facing....you might want to put on a double thickness to the windows. Like she said LIGHT is a huge factor. If you don't have a room you can black out...clean out your closests and use the room you can. Vaccum seal what you can to save them.

@@theIAMofME I asked Lisa and she answered, but thank you. I do have a pantry where my food is stored in the dark. We also have food under the bed in storage and in the closet. These were just some beans I had in my kitchen that were excess and I did not have a place for them. We recently bought another cabinet to store more food in so now I have added room. Thus why I asked Lisa about them.
