This actually includes just a nice design for a differential amplifier, but the difference is both the inputs are the pure high impedance opamp inputs. Normally you might need 3 opamp blocks to do this in a traditional instrumentation amplifier design. I quite like this circuit for many ideas. Only needing 2 opamps is extremely convenient for using many dual opamp packages. For instance I'm interested in using it for a low-ohm measurement device. It can measure across the resistance source with very high impedance, so not disturb the current flow, and doesn't need one of the measurement points to be at 0V.

Used many times. Sometimes adding an extra strain gauge in the other leg of the bridge to compensate for temperature drift.

There are some strain gauges with the entire bridge built-in using two pairs of otherwise identical perpendicular cells in mirrored inverse arrangement on the same substrate to form the whole bridge. That doubles sensitivity while taking care of temperature compensation and resistance matching. Of course, you can only use those when you know for certain there won't be any strain in the perpendicular direction large enough to meaningfully interfere with the bridge's two reference gauges/resistors.
