I'm returning to say, this does seem to work. My batch of store-bought strawberries (non-organic, just regular pesticide-juice kind) went through slightly over a week in the fridge, an 11-hour power outage, a second power outage of a few hours, and I'm saving the last two strawberries for tomorrow morning before buying more. This is the second batch I've done the vinegar treatment on and thus far have been VERY happy-both times the strawberries appear brand new even after a week. Really cool, thank you!

Hi! My jars get a ton of condensation in them when I put them in the fridge. Should I be concerned about that? I let all of the fruit dry for a really long time (overnight) and I live in a Dry climate. I don’t know where the moisture is coming from inside the jar than the fruit.

So, I’m trying this today. Got my strawberries and followed your directions. It’s sitting on my table on paper towels instead of a towel. Hopefully that won’t make much difference. I’m anxious to see how they turn out after a week or 2. I candy fruit and having to buy new strawberries because the other ones get soft spots FAST are annoying and a big waste.

Papertowels is fine for drying, that's what I use for raspberries because they stain the towels

If you have few pounds can you reuse the vinegar water if reused immediately?

Once you see how dirty the water is you might change your mind. I go on how dirty the water looks so if I am washing like cucumbers and peppers I might reuse it but hardly ever with berries.

@@TheCrossLegacy what am I doing wrong, I dried the berries under netting for over 4 hours and put into very clean, very dry glass jars, they were beautiful.. until the morning and jar's full of condensation, re dried, back into very dry jars and same thing next morning, Today, I dried again for 4rs and put into dry plastic containers and when I arrived home, Condensation!! Ugh!! I guess they will go to the freezer, I have done this 3 days in a row, cry, cry, However, I never felt such a clean strawberry, I just dian't want to freeze them as I do not have a way to make smoothies, (:

Did you set a timer for soaking? 2 mins? A little bit of condensation in the jar is ok just open the lid in the fridge.

A little bit of condensation is ok if you followed the instructions. I have a video on it

Yes, the same methods will work and they should last 6-8 weeks!

It seems like rinsing right after soaking in the very diluted vinegar would rinse all the vinegar right off. How is it that only 2 minutes exposure to very diluted vinegar helps? What does it do? Thanks!

2 mins is what you need to kill off mold spores, e. Coli, listeria and other harmful pathogens. Soaking longer than that, you will start pickleling your produce items.

Wow. A 40 parts water and 1 part vinegar solution for only 2 minutes is strong enough to kill off those harmful substances?

Will this work for Strawberries gotten from the side of the road farmers? When they are really ripe? Should I go through the strawberries and make sure none have even slightly bruiseed skins or nicks? Do we need to fill the jar? I'm trying to figure out how large a jar to buy.

yes, if you wash them longer they get mushy and will not last.

@@TheCrossLegacy I'm very excited! I did it, including waiting for them to be "bone dry" and then put them away with a paper towel. Did everything as closely to what you said as possible. We'll see! I love strawberries even though apparently they've been on the Dirty Dozen list for years and years lol

It will last longer in glass than plastic, so I recommend glass. But it can be a glass container that has an airtight lid.
