Recipe for: Strawberry Jam in Jars According to Grandma's Recipe. Save the Taste of Summer for Winter. Winter!
Necessary products:
4 kg. strawberries, pre-washed
1.6 kg. sugar (400 g of sugar per 1 kg of strawberries)
5 g citric acid (or ½ packet)
3 vanilla pods
Method of preparation:
Wash the strawberries and cut out the green parts. Cut them into 4 parts.
In a bowl, mix the sugar and vanilla. Stir well.
Arrange the strawberries and sugar in the saucepan, alternating a row of strawberries, a row of sugar. Finish with sugar.
Cover the pot with a lid and leave it in the refrigerator overnight to let the strawberries release their juice.
The next day, remove the pot from the refrigerator and leave it at room temperature for 20 minutes to allow the strawberries to acclimatize.
Turn on the heat to medium and bring the jam to a boil. The resulting foam must be skimmed off periodically.
Simmer the jam over moderate heat, stirring occasionally, until thickened, about 90 minutes.
Finally, add the citric acid and mix.
Boil for another 10 minutes.
Turn off the heat and let the jam cool slightly.
Fill previously washed and sterilized jars with the jam.
Close the caps tightly.
Place a cloth on the bottom of a pot and arrange the jars in it.
Pour water into the pot so that it covers the lids of the jars.
Bring the water to a boil, then reduce the heat and simmer for 5 minutes.
Remove the jars from the pot and turn them upside down.
Allow the jam to cool completely.
Store the jam in a cool, dark place.
