Recipe for: Baked Mackerel with Garnish. These Flavors Will Take You Back To Your Childhood. Dinner For The Whole Family!
Necessary products:
2 mackerel, gutted and heads removed
2 onions, cut into thin half-moons
2 red peppers, thinly julienned
2 green peppers, thinly julienned
1 carrot, thinly julienned
1/2 bunch parsley, finely chopped
200 g of pureed canned tomatoes
100 ml. White wine
1 lemon
Salt
Pepper
Spice
Bay leaf
Oil
Method of preparation:
Prepare the fish:
Cut each mackerel in half along the middle bone to separate the fillets.
Cut each fillet in half.
Season with salt, sprinkle with black pepper and lemon juice, and brush with oil.
Prepare the vegetable canapé:
Heat some oil in a pan.
Add the onion, green and red peppers, and carrots.
Stir and simmer for 5-6 minutes until tender.
Add the white wine and wait 1 minute to evaporate.
Add the pureed tomatoes, salt, pepper, allspice, bay leaf and half of the parsley.
Stir and add 100 ml of water.
Simmer over moderate heat for 10-15 minutes until thickened.
Transfer the vegetable mixture to a baking dish.
Bake the mackerel:
Arrange the fish pieces on top of the vegetable mixture.
Garnish with lemon wedges.
Bake in an unheated oven at 180°C for 20-25 minutes, fan-free, in the lower part.
Serve:
Sprinkle with the remaining parsley.
Serve warm.
