40 g unsalted butter
210g cream cheese
40g sugar
30g unsweetened yogurt
1 tsp lemon juice
5 g powdered gelatin
25g water
145g heavy cream
60g strawberry puree
60g mango puree
60g green kiwi puree

(Add 15% of the weight of the fruit, boil lightly and filter out the seeds before use.)
