Hello.
I'm Boone Bake.
Today I made a very cute mini fruit charlotte cake.
When spring comes, the flowers get even better.
I wanted to make a flower garden with fruits.
It's like a very small potted plant!
Mini Charlotte Cakes are as beautiful as small flowerpots.
I really liked that fruit flower garden.
It's for one person, so I think it's good for entertaining guests.
Raspberry, blueberry, mango, strawberry, green kiwi, you can't tell how delicious they all are.
I was greedy while making it, so I made several things...
You can make it by limiting the number of fruits.
And at the end, I gave a point with a ribbon, and it was really lovely.
When making Charlotte and tying a ribbon, it is made beautifully. For those who say, please watch the video till the end.

237 ml = 1 cup
15ml = 1Tbsp
5ml = 1tsp
1 egg (without shell) 53 g
Heavy Cream (35% milk fat)
(Chocolate is minced, flour is before sieving)
♥ Cake finished size
[ 8cm * 5.5cm (height)*5 pcs ]
● Vanilla Biscuits
[Size: 21cm * 5cm *5pcs // 15cm*20cm*1cm]
3 yolks
20g sugar ( 1 Tbsp+ 2 tsp )
3ml vanilla extract
3 egg whites
2g lemon juice ( 1 tsp )
70g sugar (1/3 cup + 1 tsp )
70g cake flour ( 1/2 cup )
20h Almond Powder (2Tbsp+1tsp)
5ml cornstarch (2tsp)
1/4 tsp baking powder
powdered sugar
♥ Fruit Cheesecake (Raspberry, Blueberry, Mango, Green Kiwi, Strawberry Cake)
(Mold size: 6cm(D)*4.5cm(H)*5 pcs )
175g cream cheese (3/4 cup)
30g sugar ( 2 Tbsp + 1 tsp )
25 g sour cream ( 1 Tbsp+ 2 tsp )
1/2 tbsp lemon juice
4 g powdered gelatin ( 1 tsp )
20g water ( 1 Tbsp + 1 tsp )
100g heavy cream (1/3 cup + 1 Tbsp + 1 tsp )
25g Raspberry puree ( 1 Tbsp+ 2 tsp )
25g blueberry puree ( 1 Tbsp+ 2 tsp )
25g mango puree ( 1 Tbsp+ 2 tsp )
25g green kiwi puree ( 1 Tbsp+ 2 tsp )
25g strawberry puree ( 1 Tbsp+ 2 tsp )
Fruit puree?
Add 10% sugar by weight of the fruit and boil lightly, then filter the seeds before use.
♥ Syrup
40 g water ( 1 Tbsp + 1 tsp )
15g sugar ( 2Tbsp )
3ml brown rum

Morning Boom, small cakes and baking treats are always so welcome and look so magnificent. Cupcakes decorated so elaborately, but it could be a bit too much sweetness, depends on how the baker wishes to express themselves. These small charlottes are so inviting. They would be great for a celebration table, I would place them on a flat mirror to reflect the beauty and bring out more colours. What a treat!! You truly change the ordinary into the extra-ordinary. Would these not be beautiful for an Easter tea table in the late afternoon. The fresh fruit topping mixed with the creams would be fantastic to eat. Thank you for taking the time to share your baking skills and what can be achieved with some patience.
