So, photographing the moon, exposure should be for daylight. It is day light on the moon. That solves a lot of movement issues. Of course foreground will be dark, but without a significant subject, doesn't matter. You were actually right about the color. It's only red when it's low in the horizon because of the atmosphere, shorter wavelengths of light are filtered out. As it moves higher, the longer red wavelengths become less dominating.
