4:00 gyoza go onto the right pan 5:00 water goes into the pan 5:15 lid is closed. 6:30 excess water is poured out. 6:45 oil mixture is poured over top of Gyoza 9:00 lid is opened and Gyoza fry longer 10:00 Gyoza are pulled off 5 at a time

Great vid! Small correction: I think you steam first then they wait for the bottom to get crispy once the water evaporates! That's why they leave it a bit after the alarm goes off. 😊 Sorry for being a Hermoine!
