I'm Japanese. This is not Hiroshima okonomiyaki, but what is commonly called Hiroshima-style okonomiyaki. If you say this to Hiroshima residents, they will get really angry and say that this is not Hiroshima okonomiyaki, so be careful.

Thank you for the correction. (but i still believe this is Hiroshima Okonomiyaki. It isnt pre mixed in a bowl)

My guess would be takuan (the yellow stuff) and fukujinzuke maybe? (the red stuff) - basically just Japanese pickles

Dark red is dried shrimp the yellow one is something make with egg.

​@@hibirenI'm Japanese. Takuan can be added to bowls such as katsudon, or it can be eaten as a standalone pickle.Keep in mind that Fukujinzuke is mostly eaten only with curry.

Resting the whole egg shell in the cabbage increases the chance of spreading salmonella . Education, not hate

I don't think that is true. We use raw eggs in many dishes. Here, though, the egg is clearly getting steamed by the moisture from the other ingredients.
