I'm Japanese. This is not Hiroshima okonomiyaki, but what is commonly called Hiroshima-style okonomiyaki. If you say this to Hiroshima residents, they will get really angry and say that this is not Hiroshima okonomiyaki, so be careful.

@@hibirenI'm Japanese. Takuan can be added to bowls such as katsudon, or it can be eaten as a standalone pickle.Keep in mind that Fukujinzuke is mostly eaten only with curry.

I don't think that is true. We use raw eggs in many dishes. Here, though, the egg is clearly getting steamed by the moisture from the other ingredients.
