If your greens are a little wilted (usually from dehydration of travel, refrigeration, etc) you can put them (any greens) in a sink of cold water and let them sit for a while. They will re-hydrate and refresh themselves. Plants need moisture - water! - to stay snappy-fresh.

This recipe actually can apply to most leafy greens. And it's the most common way that Chinese eat their greens. I personally like garlic stir fried A choy more than pea shoots. Great Video anyway.

That is the basic way to cook vegetables here in Italy. We just use different flavorings (and different vegetables). Extravirgin olive oil, one or two garlic cloves, a good piece of chilli, toss, in with the vegetables, pinch of salt and that's it. If the vegetables is a bit more hardy, like broccoli, you just add a dash of water and let the vegetables cook lid on until tender. Pair them with a steak, as you did, add eggs and turn them into a frittata, or boil some pasta while you are making the vegetables, drain the pasta, reserving a bit of the cooking water, and dump the pasta and the cooking water in the vegetables, stir for a minute or two and eat. I guess those pea shoots would be great with pasta as well.

Mike is right that kids really like this dish, even though they may not like other veggies. I always get this for my kids at local restaurants. However, the stems/leaves can be a bit stringy and hard to chew through for little kids (and other tooth-challenged people). When I make this at home, I roughly chop the veggies to make them a bit easier to eat. Doesn't look as good, but it means you can take smaller bites and have to chew less, which works out great for the kids. I sometimes make this with liquid chicken broth, or a few dashes of soy sauce instead of chicken bouillon. The same basic recipe works for almost any veggie.

i picked some pea shoots at a local farm this weekend.. came home and made this. same way but after i put garlic in oil i put crushed dried chilli flakes then i threw in the pea shoots and salt to taste. yummmmmmm

Thanks for posting this recipe. I would love to see more veggie recipes especially greens. There is a small family owed Chinese resturant I go to on occasion and always seem to come in when they are sitting for their own lunch or dinner. I noticed they always are eating amazing fragranced leafy greens and rice with a small side of grilled meat. It smells so different from anything on the menu. We have a few asian groceries here that I frequent but do not know what green they are eating to experiment with at home. Neither the parents or grandparents speak english (just enough to order by dish number) and have not seen their daughter who are fluent in English in awhile so have not been able to inquired about it. If it was on the menu I would definatly order some. Now, I am going to keep my eyes open for fresh pea shoots next time I am at the grocery.

Hi, Mike! I was not born in China, moreover I am not even Asian technically (well, if Russia is considered to be Asia) , but I do share similar tastes with you and I do like the way you cook and your recipes, especially the ones from the North-East like Shandong or Heilongjiang, because the cuisine there is quite similar to my own country's one:) I am currently studying abroad and I've been trying to cook Chinese dishes as I love it, though some people wouldn't understand my tastes due to my nationality, however your tips and tricks are really useful. I will get a wok asap, as I understood that my frying pan does not fit my appetite (hey, another thing in common!). I just wanna say thank you for being a "coach" in cooking and please, keep doing your homemade dishes tutorials, they are deliciously cool ;)

Not only in Italy, but also in Spain many vegetables are cooked in this simple way. We just don’t have these kind of vegetables there. I ate this dish for the first time at the Galen Wok at San Antonio, Texas, and I thought it was delicious and very similar to some kind of spinach.

oh man! i will do this with my home grown swiss chard, you forgot the hot oil (chile) i'd be happy with this dish and some rice. my mom was born in peru, rice is a staple, many chinese in peru. some of her best recipes were chinese-based. very good for you too! love pea shoots!!! Mike can you please do a video on how to take care of a wok? I used to own one, but find rusty brown bits coming off of it after every use. I heard somewhere that you are suppose to prepare a brand new wok with hot oil and salt, and never watch a wok with water. Got any tips? I now only have a non-stick wok, but it can't handle as high temperatures.

If your greens are wilted, soak them in room temperature water for an hour or so. It makes them crisp again. Works for almost all vegetables.

hahaha. I was just having a conversation with a friend while shopping for food and he pointed me to a giant bag of prepped garlic saying that I needed the five pound bag because he sees me use garlic in EVERYTHING!! and it's true. I use a ton of garlic in all my cooking.

I want to do this thing where i make my own chinese spread. i have a lot of recipes but i don't have enough friends to do it and my mom DOES NOT EAT CHINESE at all. i have one of those small apartment fridges so, not enough room to store it all. quick question: do you take requests? because if you do can you make that pork dish with the sweet bean paste and scallions and tofu skins. you get it in alot of your videos, I live NOWHERE NEAR new york but i do have a chinese grocery store near me. and i want the recipe, it looks amazing. :D

pea shoots are definitely one of my favorite veggies out there!! the only problem i have with buying them at the grocery store is that most of them are too "old" b/c those are really fibrous! it's hard to come by the super tender ones.

I have a weird comment that sounds far fetched but I believe it's true. While my mother was pregnant with me and two if my siblings she didn't eat meat. Neither of us have a taste for meat. Especially me. When I was little my grandparents tried to get me to eat things like beef, pork and turkey but I hated it, I only really liked tender breakfast sausage and chicken. Eventually my taste for meat disappeared all together. To me the main reason I ate meat was for the seasonings in it. My mother had another baby but this time she was no longer a vegetarian. My little brother looooves all things with meat. I'm a vegetarian now and it's one of the best decisions I've ever made. I think my taste for meats was predetermined in the womb.
